Lemon Cake with Lemon Filling and Lemon Butter Frosting

Reviewed: Sep. 17, 2006
SPECTACULAR! I cannot rave enough about the lemon filling...I love it and make it all the time. If you don't feel like making the cake from scratch, just used boxed lemon...but make the filling and frosting and you'll be rewarded!

Spring Lime Tea Cookies

Reviewed: Sep. 17, 2006
I made these for one of the dessert nights that I hosted and the ladies gave these rave reviews. I was a little skeptical since you add granulated sugar (and not powdered) to the juice, however they really like it.

Stuffed Shells I

Reviewed: Sep. 17, 2006
I use one pound of large curd cottage cheese and one pound of full fat ricotta cheese instead of just cottage cheese and I use basil instead of oregano. I also use about twice the sauce (I love sauce). I use this recipe all the time ... it's definitely a keeper!

Sweet Potato Casserole II

Reviewed: Nov. 21, 2005
Excellent! I halved this recipe and put into a corning ware casserol dish. I ended up using three good sized sweet potatoes for only half the recipe. It turned out very good, I received many compliments!

Fudgy Chocolate Fondue

Reviewed: Nov. 20, 2005
This is a really tasty and easy recipe. Before making it, I read the reviews and noticed that a lot of people said that it was too thin. The problem lies in the fact that they did not cook it long enough. The recipe say to cook until "sugar is dissolved and mixture is smooth". If you do not cook it long enough the fondue is very thin and watery, but if you let it come to a boil, it thickens up nicely and is very very tasty :)! I would highly recommend this recipe. We dipped cannolis, trefoil girl scout cookies, lady fingers, pineapple, peanut butter and fluff grahm crackers, and whatever else was in the kitchen in this and it was very good!

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Reviewed: Nov. 20, 2005
Awesome! A couple things I noticed: you do not need to add salt, the blue cheese gives it enough and you can always add it later; and I used center cut thick pork chops and these needed about 40-50 minutes to cook completely. These were really really good!

Split Pea and Ham Soup I

Reviewed: Oct. 23, 2005
This was very very good! I didn't have a ham bone, so I added about 1 pound of ham cubes to the mix. I also added 1 potato (cubed), 2 stalks of celery (chopped), and 1 carrot (chopped). I also used reduced sodium chicken stock to the soup instead of water (two 14.5 oz. cans). I added the salt and pepper towards the end. This only needed about an hour to cook. I let this sit overnight and it thickened quite a bit so I added more water when I reheated it. Next time I would probably add atleast three cans of chicken stock. Very good recipe and highly recommend!

Grandma Johnson's Scones

Reviewed: Oct. 14, 2005
This recipe is beyond awesome! I made these for a small home wedding shower and for a Sunday night dinner party! I added 1 tsp vanilla and 1 tsp cinnamon to the batter. I divided the batter into thirds and flavored with different things. So far I have made blueberry (1/3 c. dried blueberries with 1 T. lemon zest), coconut (1/3 c. coconut with coconut sprinkled on top), cranberry (1/3c. dried cranberries with 1 T. orange zest), chocolate chip (1/3 c. mini chocolate chips), cinnamon raisin (1/3 c. raisins with cinnamon dusted on top) and finally plain with cinnamon on top. There are so many different things you can do with this recipe.

EAGLE BRAND® Banana Cream Pie

Reviewed: Mar. 25, 2005
Awesome. Pretty much sums it up! Everyone who had it loved it. I was a little worried about dipping the bananas in the lemon juice, but it didn't taste lemony at all. To decorate the top of the pie, I placed 8 banana slices on the top and then I melted about a 1/4 c. chocolate chips with about 1 tsp. of Crisco and drizzled it over the banana slices mainly with a little drizzling in the center...looked really impressive!

Broccoli Chicken Divan

Reviewed: Mar. 22, 2005
This recipe is awesome, I would highly recommend it because it's so quick and easy to make. 1.5 cups of cooked chicken turns out to be about 2 chicken breasts and for a pound of broccoli I used one big bunch from the grocery store. The only change I made is that I added about 3T of breadcrumbs instead of one to give it a little more topping. This recipe is not soggy whatsoever, it's very delicious

Herbed Turkey Breast

Reviewed: Dec. 30, 2003
This is an excellent recipe. I made this for my boyfriend and me for Christmas Eve. The only change I made was to use a turkey breast that was about 2 and a half pounds rather than the monster the recipe calls for. This is a really great recipe.
