Mini Meatloaves

These bake nicely in the oven and hold together well. We loved the texture and flavor. Like other reviewers suggested, I made these in muffin tins instead. Very easy! I was able to make 10 mini loaves that way. Beware hamburger grease bubbling over the edge and down into your oven, though. Next time I will put the muffin tin on a large cookie sheet with a lip to it. I gave 4 stars instead of 5 because we thought the ketchup "glaze" was way too sweet. I think the brown sugar could could be drastically reduced, or even eliminated. So next time, I will experiment with that.

Lemon Coconut Squares

Perfect Pumpkin Pie

I found this a reliable pumpkin pie recipe. I liked how the sweetened condensed milk affected the outcome - it was good & firm, yet tasty. Definitely recommended in my book! I thought the balance of sweet was just right (and I tend to have a sweet tooth, FWIW).

Broccoli and Tortellini Salad

I actually discovered this recipe on this site a couple of years ago, and have made it several times. I decided I'd add my 2c. My hubby & I love this salad! It's such a delicious combo of flavors, and it's kinda healthy, too (especially if you use low fat mayo & bacon). I keep it pretty much the same as written, except I cut down the onion amount a little. I liked one reviewer's advice to briefly blanch the broccoli and onions before stirring it all together. I think I'll try that next time. All in all, a great pasta/veggie salad--one that we eat for a meal in itself!

Caramelized Onion and Gorgonzola Pizza

I thought this pizza was delicious! Following the lead of previous reviewers, I did cut the amount of cheese in half, and it was great. I also drizzled a bit of olive oil over the pizza before baking. I love carmelized onions but had never made them at home before. This is so easy; it just takes awhile on the stove for the onions. I will definitely make this again--the flavor combo is great!

Italian Peas

I was hoping to be more impressed with this recipe. To me, all the neat added ingredients just didn't do a whole lot for the frozen peas. I was interested in a way to "jazz up" frozen peas, and unfortunately, this still just tasted like frozen peas with onions.

Very Berry Muffins

I gave this recipe 5 stars, conditional on the fact that I took others' advice and changed it around a bit. First of all, I doubled it to make 24 muffins. I guess I was certain the changes would make them good! And it worked. I increased the brown sugar from 1/2 c. to 3/4 c., so they were just a little bit sweet (perfect). I was generous with the berries, using a little more than called for. For the flour, I used 1 1/3 c. whole wheat, and 1 c. white flour. The oats I used were quick-cooking as well. I added a tsp. of vanilla and a pinch of nutmeg. I also folded in about 2/3 c. sliced almonds with the raspberries. These are delish with all the above mentioned changes! I never made the recipe in its original format, so I can't comment on that. But, if you want a healthy, hearty, mildly sweet muffin, the addendums I mentioned should get you that. Oh yes, one more thing, I did NOT bake them for 25-30 minutes as the recipe stated. In my oven, it only took 18 minutes! I would start checking them around 15-17 minutes just to be safe. Enjoy!

Swope Bread

LOVE this bread! It's dense, but not too heavy. Just a bit sweet & so good buttered! I bet it'd be good made into french toast, too. I did cut the recipe in half, and made just one loaf. I used a glass loaf pan, and only had to bake the loaf about 45-50 minutes. Truly is a very easy recipe!

Seven Layer Tortilla Pie

This was delicious! I was a little nervous, because I'd never made it and was having company the night I finally DID make it. But it turned out wonderfully! So tasty, and relatively healthy, too. I didn't use cilantro (didn't have any), but otherwise followed the recipe exactly & was very pleased. If you like mexican-type dishes, I recommend you give this one a try!

Spinach Cheese Pie

My husband and I found this dish to be odd--it was not what I'd imagined it would be. The nutmeg, to me, gave it a weird flavor that didn't seem to belong. As my husband put it, "it tasted like pumpkin pie, but it was green and white." I won't be making it again!

Artichoke Pie

I found this very tasty with no tweaking of the ingredients; my husband agreed. If you like the flavor of artichokes, I don't see any reason why you wouldn't love this pie! The cheese is yummy, too.

Caramel Pecan Pie

I made this pie for Thanksgiving, and then again for my family at Christmas! It is absolutely delicious, if you like a rich, caramel-y pecan pie (which I do!). It turned out beautifully, and there is nothing I'd change about the recipe.

Best Bean Chili

I made this chili in the crockpot. My husband and I both thought it was delicious, although he said it was just a little too sweet for his tastes. I think the brown sugar could be reduced in that case. I really enjoyed the flavor of it and would make it again!

Chocolate Chip Cookie Pie

This pie is delicious (if you like a rich dessert!); however, I had to take it out of the oven before it was fully set/done, because it was getting too brown on top. So, it was kind of mushy in the middle, and a little runny if you try to reheat a slice to serve with ice cream. I used only 1/2 cup of the nuts and milk chocolate chips instead of semi-sweet. It was tasty, even if the presentation wasn't the best!
