Gerry's Chicken Enchiladas

Reviewed: Feb. 15, 2003
This recipe is GREAT!!!! I did make a few changes, though. I followed the recipe through step 2 minus the chicken broth. After removing the chicken I chopped it up and had plenty of the stewing liquid, which I blended with my immersible blender and used this for the sauce.(It is just that good!)I did reduce it some. I also microwaved the tortillas, so I didn't need the cream. I also left out the can of enchilada sauce, and the chicken broth. With the few changes this recipe can be made often and in little time. This is definitely a favorite. Thanks for sharing, Gerry!

Tar Heel Pie

Reviewed: Oct. 24, 2003
This an EASY and quick pie to throw together. I was able to fill a regular pie shell with these ingredients and they just fit into that shell. Will keep any chocoholics sweet tooth satisfied.

This was the first time I ever had or made tuna casserole and it was WONDERFUL!! I used solid white albacore and 2-3 cups shredded cheese and garlic & herb bread crumbs on top. Very easy weeknight dinner.

Honey Lime Chicken Wings

Reviewed: Mar. 1, 2004
This recipe is awesome!!! I didn't have any fresh limes, but "real lime" juice in the plastic lime and used 3 tbsp and used more garlic. I mixed all the sauce ingredients, lined a 9x13 pan with foil, placed chicken and sauce in pan and baked until chicken was a rich brown color. My husband and I finished the whole pan of wings.

Lana's Sweet and Sour Meatballs

Reviewed: Mar. 6, 2004
The sauce for these is great! I did make the following changes, I doubled all the sauce ingredients except the cornstarch and the pineapple, left out carrot and green pepper. I then used my immersible blender and made the sauce a little smoother and added the meatballs to that, and I had plenty of sauce for 3-16oz pkg of meatballs (store bought) and they still tasted good, but next time I will make recipe as is. All that can happen is that they taste even better. But in a pinch I will use this sauce and store bought meatballs.

Banana Fritters

Reviewed: Mar. 8, 2004
This just wasn't what I was hoping for. I made these with grated apple and they were not sweet at all. I added extra sugar and spices and the taste is not there, even with LOTS of powdered sugar. I will look for a better recipe.

Cake Mix Cookies VIII

Reviewed: Mar. 30, 2004
I was in the mood for cookies and had a cake mix and found this recipe, and it is GREAT!! I was worried they wouldn't taste like "real" cookies, not to worry. This was my first time making cake mix cookies. I did add 2tbs of oil and 1tsp vanilla and Irish cream per another reviewer.I used yellow cake mix and followed everything else. Definitely worth trying!!

Grandma Johnson's Scones

Reviewed: May 21, 2004
I've made this recipe 4 times since discovering it a week and a half ago. They are awesome!! I keep them in a ziplock bag and reheat them in the toaster and they taste like they came straight out of the oven!! I do add about 1/4 cup more of the sugar and chocolate chips!! This is a keeper!!!

Best Brownies

Reviewed: Aug. 16, 2004
These are EXCELLENT!! They are the only brownies I make. I have made these several times with and without the frosting and they are good either way and so easy to throw together. I will never use a boxed mix again.

German Apple Cake I

Reviewed: Feb. 26, 2005
This recipe was easy and really good. I found two medium apples and 1 small were plenty for this cake. Tastes great w/out nuts. I also made a quick glaze with 2 tbs butter, 1/4 of milk and 1/4 c brown sugar and poured this over the cake while both were still hot. Excellent.

Chocolate Mousse II

Reviewed: Feb. 26, 2005
This taste of this was good. But the amount of liquid seemed off. The chocolate chips didn't melt all the way. I wound up putting it in the micro for about 30 seconds each time I have made it. This recipe works for a quick chocolate fix.

Honey Whole Wheat Bread

Reviewed: Feb. 26, 2005
This bread is wonderful. It came out very light and delicious. The only thing I did was decrease the white flour by 1/2 c and increase the wheat by 1/2 c and the salt to 1 tsp. Other than that no changes are needed. Great bread.

Authentic German Potato Salad

Reviewed: Jun. 17, 2012
i just made this and the only thing i changed was the amount of sugar. i erred on the side of caution and only used 2 tbsp of sugar and it was still too sweet. my suggestion would be to make the sauce without the sugar and add the sugar to your liking
