Mini Pineapple Upside-Down Cakes

These are extremely yummy and are a very "cute" dessert - great for entertaining. You don't need to trim the pineapple rings - just push them down so they slope slightly up the sides of the cup. You can also put the cherry in the middle before you pour the batter on top. It makes the whole recipe even easier!

Turkey Burger Pie

Hawaiian French Toast

This was really good. Don't skip the rum extract - it really adds to the flavor. I didn't have enough egg mixture to use the whole loaf of Hawaiian bread, but since I was feeding two people, it worked out better anyway. The fruit topping is easy and quite tasty, although you had better be in the mood for something sweet - whew! I accidentally added 1 teaspoon of orange rind to the sauce but it just made it even fruitier. All in all, a delicious meal that thoroughly satisfies your sweet tooth.

Fresh Peach Sauce

This was really tasty. It ended up being a little thicker than I wanted, so I added another 1/4 cup or so of water (next time I'll probably just cut down on the corn starch). The almond extract adds the perfect touch. Delicious!

Greek Lamb-Feta Burgers With Cucumber Sauce

Yum! I followed the burger recipe exactly, and these came out great! I especially like the cucumber sauce. The only thing I did differently was to serve them on toasted hamburger buns instead of pita (since I didn't think they would fit in the pita very well). If you like gyros, you'll love these.

Pumpkin Bread Puddin'

Made exactly as written - absolutely delicious! Using individual ramekins is great because each one is a single serving. If you make it in a pan you'll be tempted to eat half the thing in one sitting because it is SO good.

Kitty Kat Bars

These are yummy, yummy, yummy! I use Keebler Club crackers because they line up so nicely in the pan. My husband isn't too big on sweets, but he's always asking when I'm going to make these again. I make the recipe exactly as stated (except I grease the pan first). It's become one of my go-to recipes when I need an easy dessert!

Ricotta Cookies II

These are wonderful! They have a light texture and subtle flavor. I only used 2 teaspoons of vanilla, and I thought that was perfect. The dough is sticky to work with, but a cookie baller works wonders. The glaze recipe made the perfect amount and I topped half of mine with colored sprinkles and half with candied cherry bits.

Cookie Dough for Ice Cream (Eggless)

This is very easy and tasty (add 1/2 cup mini chocolate chips to make it even better), but it didn't hold together very well in my ice cream maker. I added small pieces during the last 5 minutes of mixing but they sort of blended into the rest of the ice cream. It still tasted wonderful, but I'd like more cookie dough CHUNKS. Maybe next time I'll freeze it longer than 2 hours and see if that helps.

Apple Coleslaw

I skipped the pineapple juice (didn't have any), put about half the pepper in and added an extra TB or so of mayo. After those slight modifications, it came out great - very light and slightly sweet. I ate mine on BBQ beef sandwiches and it added JUST the right touch. Delicious!

Kielbasa Stew

This is a great way to use up leftover cabbage. I added carrots and potatoes as recommended by other reviews. It was very tasty and quite filling. I forgot to put the sour cream in and it was still great! Next time I think I'll use turkey kielbasa to make it a little healthier.

Maple Salmon

This is absolutely delicious. I've tried many different salmon recipes but my husband always says this is the best one. Don't get cheap and use fake maple syrup (like Hungry Jack or Aunt Jemima) - I've tried both, and the real stuff tastes 100% better for this recipe. I like to make rice for the side dish and then spoon the extra sauce over the top. So good!
