Chipotle Crusted Pork Tenderloin
Nice! I cut the Chipoltle seasoning down to 1T and it wasn't quite enough, so I'll bump it back up to 2T next time! Per others' suggestions, I marinated the pork in juice (orange, lime and cranberry) plus chopped scallions. I did this overnight. Then about 2 hours before we wanted to grill it, we brought it to room temp and then added the rub. The outside of the pork gets a little burn-y (thanks to the brown sugar in the rub) but it was still delicious. We all liked it! Thanks for sharing.

Easy Chicken Breast
This was decent, but like others said, the breasts themselves needed some spicin' up ahead of time! I used an Old World Seasoning (liberally) and then I used cream of mushroom and plain greek non-fat yogurt mixed together with garlic salt, and fresh chopped mushrooms. I left out the white wine b/c I didn't have any open. We served this with stuffing and a salad. Liked the sauce!

Chocolate Sheet Cake III
Yum!! I used 1 stick of regular butter and 1 stick of 50/50 Smart Balance... I omitted the nuts on the frosting, too. Didn't have a jelly roll pan so baked cake in a 9 x 13 and it took about 25-30 minutes instead. We LOVED this cake -- the cinnamon in it was just the right touch, and the cake was moist and delicious. We served it with french vanilla ice cream. This was my husband's 40th birthday cake, and he said he'd happily turn 40 again next year if it means more of this cake!
