Cajun Chicken Pasta

Wow this was so good!! I did change a few things.... added a whole onion, used all red peppers, doubled the sauce, and added cayenne to the sauce. I did cook the chicken in the pan and then removed it the oven to finish cooking. Then I sauteed the veggies, with a little butter and fresh garlic. I removed the veggies to a bowl and then started the sauce. I did make the sauce more in an alfredo style. Used half a stick of butter, added the cream, spices, and parmesean cheese. Then I tossed the veggies, and chicken back in to simmer for about 5 min. It isn't easy on calories but is worth it for a special occasion meal with a gourmet taste.

Swiss Chicken Casserole I

This is such a quick and easy casserole for those weekday meals. I layer chicken, swiss cheese, ham (if I have it), cream of mushroom soup, and then the chicken stuffing with the butter. Then make a quick side of veggies and you have a fast dinner with little prep.

Chicken Enchilada Soup I

This was a really easy and tasty soup. To save some time I did cook my chicken breast in the crockpot with some taco seasoning and then prepared the rest of the recipe as stated. I did add some cumin, frozen corn, and toped each bowl with some green onions, and sour cream. This gave it a true "enchilada" taste. I will make this again espically since it was so quick to prepare.

Beef and Biscuit

Wow I was really impressed with the outcome of this recipe. I cooked the beef mixture as directed but added some cumin, fresh garlic, and salsa. I omitted the eggs and had no problem with the mixture being to runny. Though I did have some problems wtih the crust. I precooked the biscuits as suggested but then it took so long for the top layer to cook that the bottom layer over cooked and became really hard. So to solve this problem I think next time I will layer the biscuits in a "pie crust" fashion and precook. Then layer the meat mixture and add the cheese layer at the end of cooking and garnish with some green onions and sour cream. This had a good flavor, and was a quick meal for a weeknight dinner.

Cheesy Ham and Hash Brown Casserole

Philly Cheesesteak Sandwich with Garlic Mayo

Followed others suggestions and used sirloin for the meat and red bell pepper, with mushrooms. The garlic mayo is the hit of the sandwich. Do not skip this step or you will be missing out!!

I make these all the time. The only thing I do different is I omitt the ketchup and brown sugar and use Sweet Baby Rays Bar-B-Que sauce.

Buttery Rolls

Wow these were great! Not only were they easy but they were so light and had a great texture. Very impressed. If you make these just be sure to give yourself enough time for the bread machine.

Mexican Chicken Corn Chowder

This was good. The cream seemed to make it a little heavier than I usually like in a soup. I did however add more cumin, garlic, chili powder, and some cayenne to suit our taste.

Mini Ham And Cheese Rolls

I have to admitt I was a little skeptical about the butter and mustard, but these were the hit of the football party. The flavors once baked were awesome together. I used fresh onion and omitted the poppy seeds. I did half cheddar and half swiss and the swiss are by far the best!

This was my first attempt at homemade biscuits and they turned out great. I did follow CookieClaries advice and this really helped me alot on the preparation. I don't think I will ever go back to store bought biscuits with my sasauge gravy.

Sausage Jalapeno Poppers

Everyone loved these! However I did follow others advice 1)use a melon ball scooper, makes it so easy 2) scoop out under running water 3) putting honey on the bacon is a must!! It gave it that great spicy/sweet flavor. If you have convection cooking it cooked the bacon wonderfully. I think next time I will put in more cream cheese or some sharp cheddar.

Quick and Easy Home Fries

These were really quick and easy. They cooked up perfect! I did however use canola oil in place of the butter, and used a whole onion. Added lots of pepper, onion powder, and garlic salt.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Wow this was great! Everyone at dinner gobbled it up and kept asking for the recipe. I followed others advice for all olive oil, and less sugar. I also added a clove of garlic to the dressing and it was amazing. I did sub feta cheese for the gorgonzola (not sure if everyone would like the flavor) and used mandarine oranges. Don't pass this recipe up, it an amazing and very gourmet tasting salad

Best Tuna Casserole

This wasn't horriable but also not great. I did as others suggested, added milk, and sauteed the onions and fresh mushrooms. It still seemed a little bland and needs a little more spice. Celery might be good. Will try again but play around with the ingredients.

Ranch Dressing II

As written is it very thick and has a strong mayo taste. I did add about 1/2 cup of buttermilk which helped thin it out and gave it more of a ranch flavor. I made it and let it sit in fridge for 24hr and it had a nice flavor, but after 3 days it had an awesome taste with veggies. I will make this again. It is easy and cost about the same as the bottled stuff but has a better taste.

Easy Cajun Jambalaya

This is a very easy and quick one pot meal to prepare. As written is it very good and has a great taste. We like our food very spicy so we had to add alot of extra spice and jazzed it up with a bit of creole seasoning.

Mini Meatloaves

This was a fast week night meal and took very little prep time. We really liked it but the meat seemed a little bland. I think next I will add some onion, garlic, and bell peppers to add a little more flavor.
