Savoury Potato, Green Bean and Bacon Salad

Reviewed: Jan. 2, 2013
I made this for a small outdoor dinner party. I chose it because it's reminiscent of a recipe my mother made with potatoes, beans, vinegar, parsley & olive oil. This recipe is a wonderful variation of the green beans and potatoes of my childhood. The additions of mustard and bacon are perfect. Thank you Don for sharing another great recipe :)

Dip For The Stars scaled for 10 servings

Reviewed: Dec. 23, 2012
I made this for a small dinner party. Decided to make 10 servings - 1/3 recipe) which was just about the right amount to fit in my 4"x1.75" springform pan (I had about 2T. of cheese mixture extra). I toasted the pine nuts in the oven @375 for about 6 minutes, shaking the pan every minute. And I used very good quality julienne sundried tomatoes that I further chopped with a kitchen shear. I used homemade pesto (Basil Pecan Pesto from AllRecipes). I lined the pan with plastic wrap and I did also grease the an although I did not understand why the directions included grease underneath the lining. The "dip" unmolded perfectly. Next time I will make an extra effort to be sure that each layer is heavy along the edge of the pan/mold because that would make a prettier presentation. I recommend using the finest ingredients for the best taste in this recipe. This is not an inexpensive food. I made it for a dinner party and as a trial run for Christmas. Definitely a special occasion recipe. Thank you DANA for sharing. :)

Boardwalk Quality Maple Walnut Fudge

Reviewed: Dec. 21, 2012
This fudge is very good. A few notes for the tweakers etc. First, 3 cups of white chocolate is 18 ounces of white chocolate pieces. Second, a double boiler works fine if you prefer it over the microwave. Third, a 9x9 pan would work fine in place of 8x8; the fudge would still be plenty thick. Fouth,1 teaspoon Watkins brand imitation maple flavor was plenty of maple flavor. Hope this helps. Thanks SHORECOOK for another great recipe.

Chef John's Beans and Greens

Reviewed: Sep. 18, 2012
"I grew up eating my family's escarole and beans but never wrote down a recipe. Sorry mom but this recipe is better than yours! I rarely say that! :-o) Do NOT omit the anchovies; they're included for flavor and you won't taste "anchovy" but you will taste wonderful rich, creamy deliciousness. The only changes I made to this were to add sausage at the beginning before the garlic and to increase the anchovy fillets to three (yes, 3, try it, dare you to!). Thanks Chef John! Amazing!

Balsamic Vinaigrette

Reviewed: Sep. 14, 2012
This is a very good light dressing. I scaled the servings down to 2 and added 1/4tsp good quality honey. That made enough for a large salad for our family for dinner with seared chicken breast in top. I'll definitely make again.

Jail House Dip

Reviewed: Sep. 8, 2012
Just mixed some up. I used my homemade roasted poblanos in place of the jalapeños. Oh my! I could eat this alone with a spoon! BTW, this makes a lot of dip; I made 2/3 recipe since I only had 2 5oz cans of chicken and its still a lot of dip. Thanks for sharing a great recipe :)

Jan's Home Made Brown Sugar Varieties

Reviewed: Sep. 8, 2012
I love this recipe because it's adapted for use with a KA mixer. I never woud have thought to use the whisk! a genius! Being a KA mixer over achiever I love to find new things to do with it. I had put off making brown sugar; kept buying those little boxes. Then one day I took the plunge and compared homemade to the store bought. Ever read the Domino box? ingredients: brown sugar. Hmmm....what makes it brown? Anyhow, store bought doesn't have any flavor. I'm done with it. And it's such a joy to have brown sugar in a quantity larger than 1lb especially if you love to bake. I've made this recipe several times and I'm always pleased. Thanks Jan! :)

Strawnana Bread

Reviewed: Sep. 6, 2012
This made great muffins. One-half recipe made 12 muffins baked at 325 convect for 22 minutes. I used pureed fresh strawberries (no chunks). Sprinkled tops with Turbinado sugar. Excellent strawberry banana flavor! UPDATE: After making several times I've decided that these don't rise nearly enough...they're pretty flat. I now make the joyofbaking.com version which has baking soda and baking powder and they rise beautifully. You may want to consider adjusting leavening in AR's recipe.

Banana Banana Bread

Reviewed: Sep. 6, 2012
I made these as muffins. I added some nuts and mini chocolate chips. I think they taste better the next day and refrigerated. Sprinkled some turbanado sugar on top before baking. I baked the muffins at 325 for 25 minutes.
