About this Cook
I cook and bake for my family and friends. I love to try new techniques and kitchen gear.
My favorite things to cook
I love to cook most all food. Mexican, Indian, Italian. Puerto Rican. Cajun. I like complicated recipes but also enjoy cooking quick meals. I don't have an absolute favorite thing to cook; I love all food for its unique qualities and enjoy cooking most foods.
My favorite family cooking traditions
I bake a birthday cake for each of my immediate relatives. Love holiday traditions: Christmas cookies and steamed plum pudding. Easter pies and antipasto. Deviled egg eyeballs and jello shots for Halloween. Thanksgiving stuffed mushrooms. I love all the family recipes that don't have measurements-- the ones that you cook by feel.
My cooking triumphs
Claypot cooking. Waterbath canning. Salt crust roast beef. Cupcake decorating. Layer cakes. Any new techniques that I conquer are triumphs.
My cooking tragedies
I can't fry an egg!

Curried Coconut Chicken
This was good. I used madras curry powder (what I had on hand) and added 1 cup frozen peas at the end. Thanks for sharing :)

Take The Night Off Slow Cooker Pineapple Chicken
I really think this recipe needs the slow cooker instead of the oven. I used the oven and the wonderful flavor of the sauce just didn't have time to soak into the chicken. I ended up shredding the cooked chicken and then soaking it in the sauce which I thickened and then serving that over rice. That worked out well. Thanks nanny129 for sharing your recipe :)
