Banana Banana Bread

Reviewed: Mar. 5, 2003
These muffins were awesome! I make them in huge muffin tins and cook them for about a half an hour. Sometimes I make tons and freeze them too, then when I want a muffin I just microwave one for about thirty seconds on high power. Then I have a warm delicious muffin. My family loves them! Thanks so much for the great recipe!!!! Really be sure that you use nice ripe bananas. Mashed bananas work best, so many people try to puree bananas for bread but then it's too loose and won't rise quickly or correctly.

I took the advice of another cook and added sugar and it helped alot. Also, I'm quite partial to graham crackers so I added those instead at it was great! This is alot better than you might think!

J.P.'s Big Daddy Biscuits

Reviewed: Mar. 5, 2003
These biscuit really are great. *Quick cooking lesson from the Culinary Institute of America.* Mix biscuits as directed but leave out the shortening until the very end. Form a very dry dough and then put thumbnail sized pieces of shortening in the dough. Fold it in thirds over the shortening, roll it out slightly, fold into thirds again and roll... Repeat this process about 5 times. Finally, roll it out to about 1/2 inch thick and then cut out the biscuits very close together. Re-roll the scrap in the same way, then put the biscuits on sheet trays or cookie sheets, brush on an egg wash and then bake. Rotate the sheet tray about halfway through and finish baking. The biscuits will be light, fluffy, and shiny.

Chewy Granola Bars

Reviewed: Mar. 5, 2003
These were good, but not very wet. Every time I've made them they haven't turned out right. I don't know what I'm doing wrong, but they're always too dry and crumbly. Thanks though!

These are sooo wonderful. I suppose I'm a little biased because I love apple dumplings, but these are a lot better than some of the stuff I've tried

These are really good. I can tell because my Daddy likes them, and he hates coffee and anything coffee flavored.

My Mom and Dad love this stuff and so does my grandma. She used to buy the Kozy Shack stuff, then she couldn't drive anymore, but when i made this, she got a look of pure bliss on her face.

This just wasn't good at all. I think it would be better if you used real potatoes.

Best Ever Corn Muffins

These muffins were a bit dry, but very good. Beware, DO NOT try to make these into big muffins, the dough isn't heavy enough and they will break and crumble!!!!!!!

Grandma's Eggless, Butterless, Milkless Cake

Reviewed: Jun. 7, 2003
This cake is sooooooo good! The reviewer who suggested adding salt was right! It makes the cake taste better! I made this cake for some friends as a thank you gift when I discovered I had no eggs! I was afraid it would be too plain, so I made the caramel sauce recipes submitted by Cassie on this website. I cut the cake into squares and drizzled the sauce over it and man was that good! (I saved some of it to sample to make sure it tasted alright.) I would heartily recommend this to everyone! Great recipe Miss Tina Demasi-Lemons! :)

Hawaiian Bread I

Reviewed: Jun. 7, 2003
This bread was really good. I actually made sandwiches with it. If you take a piece of bread, spread it with some diijon mustard, put on some lettuce, swiss cheese and deli ham, then another piece of bread, it makes a great Hawaiian style sandwich. Serve it with some plain potato chips and milk and you've got a great meal for a warm night! Thanks for the wonderful, splendiforous recipe!
