Roasted Rack of Lamb

Made this for Christmas dinner with my husband. He had never had lamb before and absolutely loved it. We will definitely be making this again. Simple, relatively easy, and delicious.

Toscana Soup

Excellent flavor! Both my husband and I loved it. Like other users, I used low-sodium chicken broth in place of the water/soup base. We will definitely be making this soup again soon!

Grilled Sweet Onions

Great flavor out of our sweet onions. However, I found the ice cubes unnecessary. Also, even though we used fairly small onions, they weren't quite caramelized after 30 minutes. I will definitely make this again, but next time leave them on the grill for much longer. PS - we ate these with grilled steaks. Delicious combo!

Beef Barley Stew

Great recipe! I did make some changes: I added a whole 14 oz. can of beef broth and approx. 1/2 cup of barley. I also did not add the flour at the end, because I felt it didn't need to be thickened. I will definitely make this again, and my husband loved it as well. Will probably use a little less wine next time to make it taste more beefy and less winey.

Curried Coconut Chicken

This recipe was an excellent starting point for a curry, though it did need a little help spice-wise. I tasted the sauce about 15 minutes in to the cooking time, and noticed that it tasted very sweet and bland. To amend this, I added about 1 teaspoon of Tabasco sauce, a good helping of black pepper and kosher salt, and about 1 tablespoon of fresh grated ginger. After the additions the sauce was fantastic. Even my husband liked it, who has been scared of curry in the past.
