Persimmon Cookies I

I tried making Persimmon cookies a couple years ago, and although my son liked them, no one else really cared for them. But my Aunt gave me a bag of Persimmons so I thought I'd give it another shot. I found this recipe and read the reviews. I used Craisins instead of raisins and used walnuts from our tree and added chocolate chips. I tasted the dough and kept tasting! I never do that! The cookies were fantastic and my husband said they were the best cookies that I've ever made! I am freezing them for the Holidays, but I may have to make another batch because they may not make it to the freezer! As another reviewer mentioned, it makes a difference in using ripe persimmons and I used three. Perfection! Thanks for sharing this wonderful recipe. It's a keeper! (PS, I too cut down the nutmeg to 1/4 teaspoon and that was just right!)

Baked Pork Spring Rolls

These turned out great! I love Spring Rolls, but hate frying stuff. The beauty of this recipe is that they actually do taste like they were fried. Crispy but not heavy. I doubled the recipe. Used ground Ginger, because I didn't have fresh. Used the suggested cole slaw mix and came up with 24 egg rolls. I froze most of them so we can have for later. Thanks so much for a wonderful recipe. This is a keeper for sure!

Slow Cooker Turkey Breast

Slow Cooker Turkey! Who would have thought of it! This was sooooo easy and sooooo good! I served it on Christmas Eve and everyone LOVED it! I threw some Turkey Gravy in the crock and let it cook with the turkey. Gosh, we ate that whole 10 lb breast up in 2 days! I will make this every time I use turkey!

Cheesy Zucchini Casserole I

I really liked this dish. I used toasted asagio french bread and cubed it. I should have diced the zuchini a little smaller, and probably would saute the onions before I mix them in. I served it with "Chickless Parmegan" (vegetarian) and the marinara sauce went really well with the zucchini casserole. It was good and I will certainly make it again.

Quinoa and Black Beans

This was easy to make and delicious! Every one loved it! The only thing I did was add some diced green peppers and tomatoes! I'm always looking for new recipes with Quinoa and I have another great one to add to my list!

Laura's Famous Aebleskiver

When I was a young girl, my friends Mom would make aebleskivers for us for breakfast when I spent the night. They were the most wonderful things I ever tasted. It's worth buying the special pan for! One thing is, she added applesauce in the middle of them when filling the cups. You've never tasted anything so warm and cozy! We just dipped them in sugar. Love it!
