Curried Mustard Greens with Kidney Beans

Great recipe! I was clueless about what to do with the mustard greens in my CSA box. I subbed coconut milk for the half and half since that's what I had. This is a warm and flavorful curry dish that will get me to eat those good-for-you greens.

Sarah's Banana Bread Muffins

Super fantastic muffins! I was out of white flour so I subbed whole wheat flour and only used 1/2 cup of oil and these still turned out SO good. I used grated coconut and will certainly make these again.

Spinach Chickpea Curry

The recipe was fantastic. Halfway through cooking I discovered my tofu and spinach had both been in the fridge way too long and were no longer edible. I substituted cauliflower and fresh chopped tomatoes and dinner still turned out great. This one goes in the recipe box.

Miso Soup I

I thought this soup was very good and is one of the few vegetarian versions I've seen. I followed the recipe except I added barley and red miso rather than the white and used a little more than called for. This is a keeper and will be a fun recipe to try variations with like the broths and mushrooms suggested by other reviewers or a bit of powdered soy sauce.

Plain Potato Soup

Great versatile recipe. I left out the butter to cut calories and added some veggie bouillon and I'm happy to say it was potato-y and delicious. Also a very good recipe to use up other leftovers--broccoli, corn, etc.

Orange Beef-Style Tofu Stir-Fry

This orange sauce was delicious! I substituted Sriracha hot sauce for the chili paste and used different veggies. The only change I will make next time is to add more cornstarch to the sauce as I like a thicker sauce. Also, if you like your tofu crunch, you might want to serve the sauce on the side. Thanks for the yummy recipe.
