Emily's Famous Banana Oat Muffins

These were awesome and I only played around a little (some of it due to availability of ingredients) I used 1 c whole wheat and 1 c regular flour. 1/3 c of brownulated sugar and 1/3 c of Ideal sweetener. I had no veg oil so I used 1/4 c butter flavor Crisco and 1/3 c almond milk. I also upped the cinnamon a bit (loves me some cinnamon) and added a dash of nutmeg and maybe 1/2 a tbsp of agave nectar for fun. They were moist without being dense and my coworkers ADORED them

Blueberry Muffins I

I don't like over-sugary muffins but this was very very bland. I had even added a few extra blueberries and heaped the sugar. The one positive I will give the recipe is that it did rise well enough, as long as I hand mixed it and didn't over mix it.

Chewy Chocolate Chip Oatmeal Cookies

Nearly impossible to mess these up. I took the suggestion of adding a little more flour and added a little less sugar and they turned out wonderfully. I also used part chocolate chips and part cinnamon chips. Wonderful!

Pumpkin Turkey Chili

Since I don't like the acidity of green peppers, I substituted red peppers and added a jalapeno for some zing. A can of yellow hominy gave it more texture and another fun color. I also like to play with spices, so I added some cumin and cinnamon and it was delicious! Finally, since I'm looking to lose some weight, I omitted the cheese and sour cream. It's a nice hearty stew-like chili and I didn't miss them.

Beet Salad with Goat Cheese

I didn't have any walnuts, so I substituted pecans. Also, I left out the orange juice as I didn't have it but the magical mixture here is the beets/goat cheese/candied nuts. Absolutely heavenly salad!

Seminary Muffins

Applesauce always makes the muffins a little chewy, but even knowing that in advance, these were deliciously moist and the flavor combination was wonderful. I used pecans as I didn't have walnuts and I think next time I'll omit the nuts and use blueberries like the other reviewer. :)
