Sweet and Sour Sauce I

This recipe is tasty as-is, but my husband has a thing about soy sauce. I cut back the soy sauce to just a tablespoon, and I thought it was just as good.

Broiled Tilapia Parmesan

This is so delicious. I use cod instead of tilapia because I try to avoid farmed fish. I think this recipe would work with any flaky white fish, though. It's very quick and easy. Definitely a keeper!

Turkey Pot Pie I

I made this dairy-free for my daughter. I used rice milk instead of milk and I sauteed the veggies in olive oil instead of butter. I used homemade turkey stock instead of chicken bouillon. It was still amazing! This was a great dinner!

Egg-Free Dairy-Free Nut-Free Cake

I am blown away by this cake! I used Bob's Red Mill gluten-free flour blend so that all of the daycare kids would be able to eat this. My daughter is turning one tomorrow and she is allergic to dairy. I am so pleased with the way this cake turned out! (I omitted the chocolate chips and I substituted coconut milk for the water.)

Mexican Lasagna

This was excellent! I made some of the changes that were recommended by other reviewers. I added a can of refried beans on top of the bottom tortilla layer. I also sauteed some onions along with the beef when I browned it. I used jalapeno-style diced tomatoes. I had to use mozz instead of Colby cheese because my husband won't eat any cheese but mozz, and it was still delicious. My finicky husband actually had seconds, which is something he hasn't done in years! I topped my own serving with sour cream. We decided to freeze half of it for another day.

Mexican Rice II

Good, solid recipe. I used the taco seasoning recipe from allrecipes instead of cumin, as suggested by another reviewer. It had lots of kick and came out very nicely. I'm using this rice for making burritos to freeze.

Very Simple Spelt Bread

What a great recipe! I've tried several wheat-alternative breads and they've all fallen short of the mark. This bread was moist and delicious, not to mention easy! Like several other reviewers, I substituted rice milk for regular milk and it was still fabulous. This is a keeper. I've made it every week for the past three weeks, it's THAT good.

Taco Seasoning I

This seasoning is great! It allows me to make my tacos taste delicious while controlling what goes into it. It's great for those of us who are sensitive to some of the preservatives that go into standard taco mixes.
