Vegan Chocolate Cake

I doubled the recipe and baked it in a bundt pan. I added about 20 minutes to the cooking time. Delicious!

Buttermilk Oatmeal Muffins

Delicious and a big hit with the family. I didn't have buttermilk, so I used a tablespoon of vinegar per cup of milk and let the mixture sit on the counter for 10 minutes before adding the oatmeal. I also added 1 mashed banana and about 1/2 of a mashed mango.

Salmon with Tomatoes

Fabulous! I've been so tired of baking or broiling our salmon fillets every week. Finally, a recipe for salmon which doesn't require me to heat up the whole house! My kids and I loved this even though I didn't make the rice. I made potatoes and just ended up mixing the potatoes in with the salmon in my plate. It was quite good this way, but I'll make the rice next time.

Asian Beef with Snow Peas

I was looking for something quick(still wondering what to make at 6:15pm). I pulled some round steaks out of the fridge and found this recipe. I served this with ramen noodles. We were eating before 7. We love this recipe!

Chocolate Truffles

Really pulled my butt out of the fire with this one! We make truffles every Thanksgiving and this year I lost my recipe. This is our new recipe from now on! We rolled the truffles in coconut and they were fabulous.

Best Ever Muffins

Fried Butterflied Shrimp

The first fried shrimp recipe my kids actually ate without complaint! My kids always pick the coating off of fried shrimp (they're weird; they don't know that the coating is the best part of fried shrimp) It was just a great recipe.

Veggie Chicken Rice Casserole

Finally, a chicken casserole that the kids actually like! I made a whole bunch of changes. First, we had no leftover chicken so i just poached some cut up chicken breasts and threw them in. Secondly, I added some onion-mushroom soup mix and butter to the rice as it was cooking. Also I subbed milk for the 2/3 cup of water.(We're trying to fatten up the little ones.) Also, I used canned string beans for the veggies.(Again because of the little ones) Fabulous!

Slow Cooker Adobo Chicken

I really enjoyed this recipe. I'm a this 'n that type of cook so I added about a 1/4-1/2 cup of brown sugar, two more cloves of garlic, about 3/4 cup of water, a good inch or so of fresh chopped ginger, and I used six whole legs (leg and thigh combo) with the skins peeled off. I loved the sauce so much that I buttered a casserole dish, put in a cup of long-grain uncooked white rice(basmati) and put about five ladlefuls of juice(maybe 2 1/2 cups) from this adobo chicken and 1/2 cup of water and baked the rice covered at 425 for a half hour. Yummy!!
