Sarge's EZ Pulled Pork BBQ

This was so easy! I rubbed my pork with salt, pepper, garlic and a little celery salt before putting in the crock pot. I also added 2 tablespoons of Liquid Smoke. I put mine in about 10pm and left it on overnight. I was SO good! Thanks for sharing!

Awesome Eggplant Rollatine

My 4 year old wanted to try eggplant because it was purple. We made this and she ate it up! I added a little more cheese. Be careful- the eggplant fries quickly!

Pesto Cream Sauce

This was awesome! I omitted the shrimp and replaced it with chicken. Used 2% milk, but will use cream next time for a thicker texture. Used a can of Ro-Tel tomatoes for a spicy kick, instead of fresh, but did use fresh mushrooms. Added this to spinach linguini and it was wonderful! Even my 4 year old loved it!

Buffalo Style Chicken Pizza

This was so good! I've made it twice and through trial and error found that it is better to precook the crust for about 7 minutes so the bottom gets done enough. My 4 year old liked it, even with the hot "kick".

Lobster Casserole

I made this with crab meat instead of lobster (too expensive) and it turned out so good! I was surprised at how tasty it was considering the small amount of ingredients involved. I did have to add more butter to the pan after sauteing the meat, and the flour was a little lumpy. But I whisked almost non-stop until it blended together. I also added 1/4 tsp of cayenne pepper for a little more flavor. This dish is rich, so I would plan the rest of your meal accordingly.

Amy's Garlic Egg Chicken

This was ok. The coating on mine didn't harden, and it fell off the chicken while we were eating it. I think there was too much butter in the pan. As for flavor and tenderness, they were both great. But it didn't "knock my socks off".

Six Can Chicken Tortilla Soup

This was too easy and very tasty! I substituted 1 can of condensed cream of chicken soup for 1 of the cans of broth. I also added 1/4 tsp of ground cumin and 2 tblsp of chopped cilantro. It was awesome! I used the Ro-Tel tomatoes also, and that gave it a nice kick. Even my 4 year old loved it! Great for time-pressed or cold nights.

Anniversary Chicken I

This was great! I added mushrooms, and omitted the bacon bits because I used Bacon Ranch dressing. I didn't cook the chicken first - I layered everything over the breasts, then cooked for 35 mins at 350. So good!

Coconut Shrimp I

I pressed the coconut into the batter on the shrimp and fried in a skillet. Had hardly any coconut fall off. Tasted great, even cold!

Spinach Quiche

Excellent taste. I used sun dried tomato feta cheese and fresh spinach (9 oz). I also used only 1/2 stick of butter, and 1/2 cup of milk. I couldn't pour all of the egg/milk mixture in because it would have overflowed, but it still turned out with just the right consistency. Very flavorful.

Becky's Chicken Salad

My kids request this all the time. Over the years, I have added half of a diced green apple and a little bit of diced onion and served this on large deli croissants. Definitely cut back on the mayo, but this is excellent otherwise.
