Classic Waffles
Great recipe as is. I made a variation on this that I liked quite a bit. Instead of using plaing milk, I used buttermilk. Delicious. But it only made 7-8 waffles. Next time, I'll use buttermilk and double the recipe. I didn't add any more butter or sugar. The waffles are perfect without extra sugar. Sometimes serve it with maple syrup, powdered sugar, sauteed fruit (in butter and brown sugar - e.g. apples, bananas, peaches, blueberries), or like today with leftover chicken fried steak.

Meatball Nirvana
These meatballs were quite good. I made them and placed them on a cookie sheet in the freezer til frozen then transferred them into a ziploc bag. Just took 9 meatballs out and put them in the toaster oven at 350 for 30 minutes before heating up some tomato sauce to make sandwiches. A few modifications: - Because I want to make them for meatball sandwiches, I didn't make them completely round. I just flattened them a bit, so they'd fit better in the bread - I had to leave out the peppers and hot sauce to appease the kids. I'm sure they taste great with the peppers, but even without the sauce, I found it to be tasty - I have also increased the amount of onions, carmelized them and then added them in once cooled. Otherwise, if using raw, I'll mince instead of dice. When I tried dicing, I thought the onions were a bit overpowering.

Cheesy Creamed Spinach
Tthis is the recipe I've spent the last 10 years looking for! Excellent recipe requiring no modifications to improve the flavor! i might try half and half or just milk to reduce the fat content though.
