These meatballs were quite good. I made them and placed them on a cookie sheet in the freezer til frozen then transferred them into a ziploc bag. Just took 9 meatballs out and put them in the toaster oven at 350 for 30 minutes before heating up some tomato sauce to make sandwiches. A few modifications:
- Because I want to make them for meatball sandwiches, I didn't make them completely round. I just flattened them a bit, so they'd fit better in the bread
- I had to leave out the peppers and hot sauce to appease the kids. I'm sure they taste great with the peppers, but even without the sauce, I found it to be tasty
- I have also increased the amount of onions, carmelized them and then added them in once cooled. Otherwise, if using raw, I'll mince instead of dice. When I tried dicing, I thought the onions were a bit overpowering.
