Mango Tango Black Bean Salsa

I've been making a variation of this for years. I use Rose's Lime juice rather than fresh and cayenne rather than cumin and prefer that combination (I love spicy/sweet). It is excellent over lime/cumin marinated and grilled chicken breasts OR dust the chicken breasts in corn meal/flour and saute in a little butter. A staple in my house.

Excellent recipe! I made the "ham & cheese" variation that is mentioned in the intro and it was the first dish finished at our Sunday football party. Everyone (including the kids) loved it and asked that I make it for every gathering.

Microwave Oven Peanut Brittle

This is truly amazing! I've made it with peanuts, cashews, almonds and pecans. One of the best recipes I've ever gotten from this site and so easy it defies logic! This is an absolute winner!

Spicy Mexican Salad

This was really good! I used leaf lettuce rather than Romaine, garbanzos rather than pintos. I also added chopped black olives, chopped red onion, chopped scallions and a bit of cilantro. Don't be afraid to adapt this recipe to what you have on hand. It works really well.

Chicken and Artichokes

Wonderful! This will become a regular meal for us. The chicken is very tender, the sauce is tasty (I used half stock and half sherry) and one of the easiest meals I have ever made. Highly recommended.

Creamy Pasta Primavera

As it is written, this is a bland mess. However, the thought behind it is good so I took it a few steps further. I added 2 cloves of minced garlic, 6 stalks of asparagus cut in 1 inch lengths, a small yellow squash sliced, some par boiled baby carrots and a cup of broccoli florets. Saute all the garlic and veggies together until they are heated through then continue as the recipe is written.

Yummy Yam Casserole

I omitted the eggs and butter from the yam mixture and used orange juice instead to make it a little more healthy (and add a little extra citrus kick). It was really great this way, not heavy at all. I did however use the 1/4 melted butter for the topping. It was really tasty and I will surely make it again.

Bacon Crackers

This was one of the most mediocre recipes I've encountered on this site. It wasn't bad, it just tasted like cooked bacon on a cracker. Don't expect some mysterious transformation to an epicurean delight. Bacon cooked on a cracker with a little brown sugar will always taste like bacon cooked on a cracker with brown sugar. No excitement at all.

Corn Dip

I have made this a few times. It is always "good" but not "great". It is much better if you add 1 jalapeno for each can of corn. It definitely needed a little spice. I also add a healthy sprinkle of cayenne.

Awesome Slow Cooker Pot Roast

Yes, this is tender. You would expect that after 8 - 9 hours in a slow-cooker (on low). However, the flavor is awful. It is way too salty and the sauce/gravy is an unappetizing grey. I won't make this one again.
