Pumpkin Cheesecake II

This cheesecake is delicious!! I made it for Thanksgiving in place of pumpkin pie. I made the pecan glaze someone recommended. My husband, who doesn't like pumpkin nor cheesecake normally, said it was the best cheesecake that he ever had. He also requested I make it for Christmas dessert too. This will most likely become a regular holiday dessert in our home.

Yellow Squash Casserole

This is excellent!! I did add garlic but otherwise this had a great flavor and was an awesome use of of my over-achieving yellow squash crop!

Spicy Chipotle Turkey Burgers

This was my first time cooking ground turkey and using Chipotle peppers in Adobo. I was very nervous but these were absolutely delicious! The meat was very flavorful and juicy. Oh, I did not use the Cilantro as I didn't want to buy a big bunch that I wouldn't use. I never missed it. I also made the Chipotle mayo and we slathered the buns with that. I thought it had real kick but not too hot. I am sensitive to spicy too. My 9 year old even liked her burger minus the mayo sauce. Hubby and teen son loved them! Definitely a keeper!

Pesto Chicken Penne Casserole

This got a thumbs up from my hubby and teen son. I thought it was very tasty too. I made an alfredo sauce from a packet with non-fat milk to save on some fat and left out the tomatoes because I really didn't think they were needed. I will make this again!

Shoyu Chicken

This was really tasty! I followed a tip from another reviewer to just throw everything in a pot, bring to a boil and let simmer . I simmered for about an hour and served with rice and steamed veggies. The meat soaked in a ton of flavor and the sauce went over the top. It was so good that I didn't even have any sauce left in the pot.
