Yummy Blueberry Cobbler

I just made this and it turned out great! I would have given 5 stars but I did make some changes. The first thing I did was use 5 cups of berries (wild blueberries)! I like lots of fruit. I did decrease the sugar some but still found it quite sweet. I didn't really mind the sweetness so much but I found it overpowered the blueberry taste. Next time I will half the sugar in the milk mixture and see how that goes. Because I didn't read the recipe thoroughly, I ended up mixing all the dry ingredients and then adding the milk. However (before adding milk),after reading some concerns about runny berries, I took a handful of the flour/sugar mixture and sprinkled it over the berries and then just shook the pan gently to get the flour down through the rest of the berries. No runny berries here. I also added extra cinnamon for personal taste. I will be making this again.

Chocolate Chip Oatmeal Cake

I would like to give it 5 stars but I tweaked the recipe a little. This was a very moist, easy cake to make. Some reviewers suggested you should use instant oats...I used regular oats. Soaking them in the boiling water softened them just fine. While they were soaking, I went ahead and mixed the sugars, butter and eggs. Then after the 10mins, I just added the oats to the sugar mixture and then added the rest of the ingredients (I did add 1 tsp of vanilla). I also added half the chocolate chips in the batter and the other half on top. I baked it in a 9x13 for the same amount of time. I did, however, find the batter a bit runny. So to prevent all the chips from sinking to the bottom, I poured the batter into the pan and sprinkled the remaining chips on top JUST before putting in the oven. I think next time I might increase the cocoa to 2 tbsp. I also used dark chocolate chips. Mmmm good. I will definetly make this again.

One Bowl Chocolate Cake III

This cake was awesome! I too increased the cocoa to 1 cup. I made cupcakes with it and they turned out great. Cook them for 15-20 min.(really depends on your oven and pan you use). This is my new 'go to' cake!!! Thanks!

Soft Garlic Breadsticks

OHHHH SOOO GOOD! I just made my first batch of these and they turned perfect. I didn't add quite as much parmesan and added more garlic (by accident). I also substituted 1/2 cup of whole wheat flour. Just be careful not over bake, depending on how big your 'ropes' are and your oven temperature. I checked mine at 12min. Some were done but the bigger ones took until 15min. Definetly will make again. I forgot to mention I use 1 tsp of salt and about 1/2 tsp of dried basil.

Whipped Cream Cream Cheese Frosting

I just made this today and it is amazing! Make sure the bowl and beaters you use for whipping the cream are well chilled and careful not over whip. Also, whip your 'softened' cream cheese first before adding anything to ensure there are no lumps. After folding the 2 together, I used the mixer for a couple seconds just to blend it a little better. I'm going to try piping it onto some cupcakes this weekend.

Delicious Ham and Potato Soup

This 'soup' was delicious and very easy to make. I would call it chowder though. I did make a couple of changes that would probably make it taste different. For the water and chicken boullion, I used the broth from boiling the ham & veg. I also added corn niblets, leftover carrots and potatoes from my ham dinner. This gave it lots of flavor. Didn't add any salt or pepper. Great recipe. Will definetly make again.

Fluffy Carrot Muffins with Cream Cheese Frosting

Really nice muffin. Simple and tasty. I replaced all the oil with applesauce. I also substituted some whole wheat flour for the white flour. These are great even without frosting.

Really Creamy Fettuccine Alfredo

Delicious! I also added chicken to it as my husband likes to have meat in just about everything. I left out the nutmeg. I don't care for nutmeg in foods other than baked goods. Will definitely make again.

Maple Salmon

Pumpkin Soup

This was the first time I made pumpkin soup. I would have given it 5 stars up until I added the cream. As the broth/pumpkin mixture was simmering, it tasted awesome. I would have never guessed that onion and garlic would go with pumpkin. Once I added the cream, the taste went kind of bland. So I added some brown sugar and pumpkin pie spice. I didn't really like the flavor this added. I will however try it again with less cream, maybe curry, more onion/garlic and maybe even other veggies like carrots or squash. Since I didn't have enough chicken broth, I added 2 cups of water with 2 pkg of veg. boullion.

Simple Whole Wheat Bread

Since Christmas I have been trying different bread recipes and this is the best one so far!!!!! I did however substitute brown sugar for the honey (because I had none). I also substituted some whole wheat for the bread flour and didn't need all of the 3 1/2 cups of w.w flour (just add it in 1/2 cup increments). The first time I made it I made 3 loaves but they came out small for my liking so the next time I just made 2 loaves. This was a better size for me. My husband even complimented me on this bread. It was very soft and easy to make. This is now my favorite bread recipe

Chocolate Peanut Butter Wacky Cake

This chocolate cake is awesome. I really wanted to give it 5 stars but we did not like the topping! But lets get back to the cake. What an easy recipe that doesn't even take many ingredients and it makes a 9x13! And you don't have to worry about 'sampling' the batter. My husband stubbled across this recipe for my birthday cake. He made it first and it turned out great (exept for the topping). This cake is now one of my favorites!!! Just use regular icing or none at all.

Bran Muffins a la Brian

I have been looking for a recipe that calls for regular bran (instead of the bran cereal). This is delicious and easy. The only changes I made were substituting applesauce for the oil and I used half wholewheat flour. Thanks.

Potato Chips

This is a great homemade chip recipe! I just sprayed my microwave plate with oil (you will need to be a little generous) and placed the potato slices on it and then sprayed them. I would start them cooking for 3 min. then add each additional min. keeping an eye on them until they brown(don't forget a little salt when they're done!). The nice thing is, when you have a craving for chips, you simply slice up 1 potato, and when it's gone, it's gone!

Pork Chops with Raspberry Sauce

What a great new way to prepare and serve up pork! My husband (who doesn't always agree with my choice of flavors) even thought it was tasty. For the first time I used regular vinegar and apple juice because that's all I had. I look forward to making it again with the ingredients listed.

Chocolate Pudding Fudge Cake

This will definitely satisfy any die hard chocoholic! And so easy to make. I do agree with another reviewer...your toothpick will not come clean as this cake is extremely moist! Simply bake for the recommended time. I will be making this one again!

Broccoli Chicken Fettuccini Alfredo

Delicious!!! I stir fried the chicken with butter and garlic too. My husband is picky and he really liked it as well. I also used the parmesan cheese in a can. Sometime I'll try using the real stuff. I'll definitely make this again.

Thai Peanut Chicken

VERY GOOD! And it uses most things you have on hand. I didn't have white wine vinegar, so I used half wine I had on hand and half plain vinegar. Very nice flavour!
