About this Cook
I am a full time employee, wife and mother, so this website is a necessity for "on the go" meals and "quick and easy" ideas. Cooking would be my passion. I love cooking for family and friends. Anytime I have some spare time, I'm always looking to reinvent a recipe or try out something new.
My favorite things to cook
I have been looking for a recipe for about 5 years that I just obtained, so recently, that is all I find myself baking. Its pumpkin bread, and it is to die for. Yum!! Among other things, I like to cook soups - my husbands favorite is a tortelini chicken broccoli.
My cooking tragedies
There are plenty to mention, but one in particular is cheescake. I just can't get that spring form pan down. I just stick to plain ol' vanilla wafers inside a cupcake wrapper.

JIF(R) Irresistible Peanut Butter Cookies
Wow - Super Salty! I had read it in a previous post, but always make my first batch per the directions. 3/4 tsp is too much. Next time, I'll try 1/2 tsp and go from there. Other than that, very delicious. This is the recipe on the back if the Hershey kiss package and they recommend rolling them in sugar prior to baking. Super yummy!

Aimee's Quick Chicken
I made this tonight for my family, as well. I took everyone's advice and used a low sodium marinade. I only had 3 chicken breast so I mixed 1/2 cup of marinade with 1/4 cup dijon throughly then coated the chicken. I also used crisp fresh bacon instead of bacon bits and freshly grated parmasan. I layered the chicken as directed, but wrapped each individual breast in its own piece of foil to keep the parmasan from overcooking. Combined with some buttered rice and steamed veggies - it made a wonderful (out of the oridinary) supper. Thanks for the recipe Aimee.

Baked Ziti I
Really really good. My husband loved it! I agree with the others... the sour cream makes an excellent substitute for ricotta. I also added a tsp of minced garlic to my ground meat. Thanks for the recipe.
