I am a case manager/peer counselor at a domestic violence shelter in my area . I am 22 and a mother of a 2 year old son. I have a loving husband who is a willing tester to my new recipies.
My favorite things to cook
I love cooking mexican food. My husband is mexican and from Zamora, Michoacan. His mother died a few years before we meet so I did't have the oportunity to have her show me his childhood favorites, so i am always on the look out for new mexican recipies.
My favorite family cooking traditions
My favorite cooking tradition would have to be birthdays. In my family growing up we did not have a lot of money and most of the time did not get birthday presents but we got to choose what was for dinner. Plus my mother ALWAYS made out birthday cake. Nothing tastes better than birthday cake made from the loving hand of your mother. Now even though time is short I practice that with my owm family. And refuse to let my husband buy a cake from a store or bakery.
My cooking triumphs
My cooking triumph had to be when I made tamales for my husband and his family when they came from mexico. Everyone loved them and said they were better than the one's in mexico. I was on cloud 9 for days.
My cooking tragedies
It took me a year to make my red rice correctly. Don't know why but I could not do it for the life of me. Also Chiles rellenos took me 6 months because i could not get the chile battered and fried with out the cheese falling out first.

Quick and Easy Chicken Noodle Soup
Good easy recipe. I changes seasonings to fit my taste though. I used rosemary, thyme and oregano. Added garlic and onion whole to broth along with celery leaves so the could be fished out. Also used rotini for the pasta and it was very good indeed. And no butter.

Tres Leches III
I have made this many times over the last couple years and never left feedback. This is the best tres leches cake. My hubby if from Michoacan and for our son's baptism we went to my sister inlaws home 7 hours away and ordered one from up there. My husband stood up in the middle of the party and appologized to the guests for the cake that was ordered because as he said " my wife makes it way better" but in spanish. And as for the feedback that if you don't have or us a stand mixer you aren't a real baker BS. I have baked for years and this cake has been don 3 times a year for about two years now and alway turned out great with a hand mixer. This will be the first year i use my stand mixer. Remember not everyone can afford a $400 piece of equipment. That does not make them any less of a baker. Just s less fortunate one.
