Special Occasion Stuffed Crown Pork Roast

I made this exactly as the recipe said but for 5 people so had a seven rib roast and couldn't get it into a perfect circle like the photo showed. So I used some aluminum foil to form the rest of the circle so the stuffing would stay in place and it worked beautifully. It was my first time ever making a crown roast. Everyone raved about it and I will surely make it again. The left overs were awesome the next day and I even had enough pork for a lovely sandwich for another day. It's a keeper for sure and very impressive when you serve it.

Black Forest Cake I

I made this recipe for my daughter's birthday last night. I followed the instructions on decorating from the video. This was superb and everyone was totally impressed! Only made a few changes. Didn't have two 9" round pans so I used three 8" round pans instead and because the cakes were thinner as a result, I only took a little bit off each to get the necessary crumbs for decorating the sides. In the batter, I used 1/2 cup coffee and 1/2 cup of milk instead of only milk because I had coffee left from the morning. One other change I'd make next time is thicken the cherry juice with the cornstarch before putting in the drained cherries so they would not break up as I stirred and thickened the mixture. Tasted just great but would have looked better. Definitely a make again recipe.

Zucchini-Chocolate Chip Muffins

These were so good and moist! I did not use zucchini but cucumbers. Yes I had a bumper crop and have been using shredded cucumbers in place of zucchini in recipes. Didn't have cinnamon so used half the amount of nutmeg instead, regular chocolate chips and chopped pecans. Doubled the recipe and used 2 c. all purpose flour and 1 cup 12 grain flour and they turned out just fantastic. Nice little crunch and extra fibre. Will make again and again - with zucchini or cucumbers.

Quick and Easy Hollandaise Sauce in the Microwave

Very easy to make and delicious! I used margarine because I had no butter and it turned out just as good. I should have started with 10 seconds in the microwave because I tried at 15 and it was a bit too thick. I added a tiny bit of water until it was the right consistency and kept whisking and it turned out really creamy. Definitely a keeper!
