Tofu Chocolate Pudding

Delicious! I think I have a new way to sneak some protein into my girls' diets! Also a nice use for my "almost too old" tofu! Delicious! I had a hard time waiting an hour to eat, so I ate it right away. :)

Slow-Cooked Corn Chowder

If you rate this on ease and taste, it's definitely a 5. That being said, I took the liberty of making some changes that I feel helped the rating (if I had not done these things, I'm not sure I would have given it a 5): I used small baby red potatoes chopped up instead of hashbrowns, substituted ground turkey sausage instead of ham, and added lots of chopped carrots and celery. Oh my goodness, it was so tasty I have just finished my 3rd bowl today. :) Thanks for this recipe!

Spinach and Mushroom Casserole

I signed up for an organic delivery service and had a lot of left over spinach, most of which was quite wilted. I decided if I cooked it as instructed in this recipe it probably wouldn't be so bad. I was right! This is a great recipe for anyone that has an abundance of (not so) fresh spinach they would like to use up. The casserole was tasty! Not too salty either as others had mentioned.

Rushin' Casserole

Don't add too much lemon juice... I believe this is what caused this recipe to be a 2 in the end. It ended up being too sour. The temperature was strange too... adding the yogurt really cooled it off, and I prefer hot (heated) dishes. A few tips: - More chopped onion is a good thing! -- More cinnamon is a good thing! This was very easy to make, but I probably won't make it again.

Slow Cooker Barbeque

This was so incredibly easy and DELISH. My husband is very picky and had two helpings of it... I even caught him gobbling it by the serving spoonful from the slow cooker! :p I used pork shoulder, Sweet Baby Ray's sauce and fresh chopped onion based on others' recommendations. It turned out great and will definately make this one often!

Chicken with Sausage and Dried Fruit

I was sold by the ease of dropping the chicken breasts in frozen. This recipe was easy and unique. The sweet and salty tastes combined were delish... loved it when accompanied by rice pilaf or buttered & salted grits... polenta would also make a great pairing for this dish.

Brazilian Chicken with Coconut Milk

Though this dish takes a little time to prepare, it is AMAZING. Spicy and delicious with the coconut milk. Add a little rice on the side and your guests will gobble this up. It's my favorite recipe I've found on this site!

Aaron's Chocolate Chunk Oatmeal Cookies

The chewy/crunchy texture of these cookies is very unique. They are very easy to make but do require longer than 10 minutes to bake. I would go 13-16 minutes. I also feel adding 1/2 butterscotch chips and 1/2 chocolate chip would be a good call. I added an entire bag of chocolate chips... this was a little too much.

Chuckwagon Stew

Great use for leftover baked beans and potatoes!! This stew is quite hearty and tastes great - especially with some spice added (I added hot pepper flakes, cayenne and white pepper). I tried cooking this on high in my slow cooker for four hours, and the meat was still pink, so I'd go with 5 hours on the high setting at a minimum.

Red Velvet Cake IV

I made this cake for Valentine's Day. The cake was moist and kept well in the fridge after a few days. The frosting was different, but a bit too cream-cheesey. To sweeten, I placed See's Candy Cinnamon hearts all over the cake, and that made it for me. I would take a hint from others and add some sugar to the frosting, or more white chocolate. There was frosting left over, but better too much than too little - I was happy to have enough frosting to cover the cake!
