About this Cook
I am married to an amazing goofball of a husband and we're parents to a sweet little girl. I am a part time working mom so I like things that are quick and easy and tend to gravitate to things I can cook in my slow cooker. The less ingredients the better!!

We do a lot of potlucks when we get together so there's always an opportunity to cook and try a new dish from someone else in the family. My husband's mom is an amazing cook and is Norwegian, so she makes a lot of old very comforting standards.

Dehydrated watermelon, pumpkin soup and pineapples in crackers and cheese... YUK!

Tofu Chocolate Pudding
Delicious! I think I have a new way to sneak some protein into my girls' diets! Also a nice use for my "almost too old" tofu! Delicious! I had a hard time waiting an hour to eat, so I ate it right away. :)

Spinach and Mushroom Casserole
I signed up for an organic delivery service and had a lot of left over spinach, most of which was quite wilted. I decided if I cooked it as instructed in this recipe it probably wouldn't be so bad. I was right! This is a great recipe for anyone that has an abundance of (not so) fresh spinach they would like to use up. The casserole was tasty! Not too salty either as others had mentioned.

Rushin' Casserole
Don't add too much lemon juice... I believe this is what caused this recipe to be a 2 in the end. It ended up being too sour. The temperature was strange too... adding the yogurt really cooled it off, and I prefer hot (heated) dishes. A few tips: - More chopped onion is a good thing! -- More cinnamon is a good thing! This was very easy to make, but I probably won't make it again.
