Italian Easter Cookies

yummy little cookie that I will make again. Different that your normal sugar cookie and we all liked the light, eggy texture. I didn't follow the frosting to the letter, did half butter and half crisco.

So good! I think the real secret here is the salt. I love the sweet and salty combination. I don't think it would hurt to double the cinnamon, but you certainly don't have to.

Washboard Cookies

Tasty little cookies. I took the advice and added the 1/4 t cinnamon, only problem was I doubled the recipe and forgot to double the cinnamon. Very faint, but still good. Reminds me a bit of a Biscotti. I would like to make these without the baking soda and play around with the spice to get it more like a biscotti. Thanks for the unique recipe.

Silver Dollar Pancakes (Gluten-free)

I decided to try these after trying a more traditional paleo pancake that was a much thinner batter. As it turns out, these thick pancakes were hard to swallow. So dry. I prefer the thinner ones. Perhaps thinning them down with some water or coconut milk would be more pleasing.

Whoopie Pies

I used butter rather than shortening in the filling. I also took the advice of others and used the pudding in the cake batter. I think the taste may have been better without the pudding. But, the texture is good. Mine made 20 pies using the medium size scooper.

Raspberry Lemon Smoothie

wow, this was like no other smoothie I've ever tasted. The seeds and pith in the smoothie were not especially appetizing. I used one container greek yogurt and one container regular vanilla yogurt.

Gobble Up Granola Snacks

Delicious! I used Better N Peanut Butter product (2 g of fat per serving vs 16 g) and it tasted great, couldn't even tell the difference. To flatten bars grease a piece of wax paper and push the bars down. Variations are endless--nuts, chocolate, butterscotch, etc.

Texture wise, they were nice and soft. Flavor wise, they were lacking. I don't really understand why with so many spices involved. Perhaps real garlic would have been better.

Chicken Breasts in Caper Cream Sauce

I would have preferred a little more lemon flavor and thinner sauce. I simmered the cream for 3 minutes and it was quite thick--no flour needed! It is very quick and easy.
