Lamb Chops with Balsamic Reduction

This is fabulous and easy! I realized after I started that I didn't even have enough balsamic vinegar. Here's what I did: 9 lamb chops from Sam's Club, trimmed the fat. Used onion instead of shallot (none on hand). Tripled the rub (chops sat for about 1 hour with this) and the sauce. Only had 1/2 cup of balsamic, urrgghh, so used 1/2 cup of good red wine vinegar. Reduction took about 25 minutes but I still added a little Wondra at the end. Placed chops over crispy Petite Gem lettuce (Artisan lettuce from Sam's Club) and poured on the sauce. My husband and I were in heaven. This may be even better with balsamic but red wine vingar worked in a pinch for us.

Quick Spaghetti Sauce

This was very tasty for being so quick. Changes I made that I believe made a difference: 1. Instead of canned tomatoes, I used 6 Romano tomatoes, 2. I added 1/2 tsp. red pepper flakes, 1.5 Tbsp sugar, and salt and fresh ground pepper to taste, 3. I added frozen Italian meatballs for the 20 min. simmer. My whole family loved it!

Japanese Restaurant Cucumber Salad

This is so authentic and tasty! The flavor of the sesame oil is incredible. I used one large English cucumber and because I did not have chili paste, I used chili garlic sauce instead. My young children loved it as a side and I mixed some of these cucumbers with romaine lettuce and shredded rotisserie chicken. I then used the sauce as a dressing and sprinkled with toasted sesame seeds. Delicious! I will definitely be making this again.

Marinated Grilled Shrimp

I give this 4 stars only because I made the changes according to aussiemum1 but LOVED this dish. I followed her ingredients but not exactly. I only used 1 lb. of shrimp but made the recommended amount of marinade for 2 lbs. Instead of tomato sauce, I used a whole can of diced tomatoes, 3 cloves of garlic, 1/2 tsp of dried basil (no fresh on hand), 1/4 cup sweet chili sauce, 1 Tbsp of red wine vinegar, 1/4 cup oil and pulsed all in a mini-processor. I reserved about 3/4 cup of the marinade and heated that on the stove for dipping. My husband and all three of my 3.5 year-olds loved it. The kids ate more than me and my husband. Next time, I'll make the 2 lbs and double the marinade as they loved the sauce for dipping.
