Beaker's Vegetable Barley Soup

Five-Veggie Stir-Fry

I thought it was a bit too sweet because I used fresh squeezed O.J. I omitted the sugar and increased the (low-sodium) soy sauce. Omitted the mushrooms, added onions instead. I did not use any oil, just sauteed onions with crushed ginger and garlic in water. Decreased the cornstarch to 1 TB. Turned out really well. My boyfriend licked the plate.

Banana Cake VI

My buttermilk turned, so I used regular milk. It came out sweet, moist, and very light. The only other difference was that I cooked it at 325 degrees for 45 minutes. Next time, I'll try it with buttermilk. The frosting was a bit on the sweet side. Too much sugar, more cream cheese. I made only half the recipe because it was too much. I might omit the frosting though. The cake is just as good without it. Thanks for sharing.

Honey-Lime Pork Chops

I used sweetened lime juice and several shakes of salt (aobut 1 tsp) instead of soy sauce. I substituted with garlic powder and onion powder, instead of cloves. I marinated this mixture overnight. The pork came out wonderfully. I didn't even make the sauce. It wasn't necessary. This was delicious. I really enjoyed the lime/honey flavor, which was abundant. Thank you for sharing this recipe.

White Chocolate, Fruit, and Spice Muffins

I was initially excited because I had all the ingredients for these muffins, but the finished product was not a sucess at all. I followed it exactly, except omitted the poppy seeds. First, the instructions didn't mention when to add the brown sugar, even though it was in the ingredients list. I just put it in after adding the spices. I didn't think that 1/2 cup brown sugar alone made it sweet enough. I think some white sugar was needed. The bitter coffee was just too overpowering. We didn't like this at all. Even the sweetness of the fruit didn't help. I am very disappointed.

Confetti Chicken

I made this as written, except I omitted the mushrooms. I think this recipe, although easy to make, was a bit bland. I didn't think the sauce was tangy as stated. My family didn't like it so much either. I added some cumin to the leftovers and that helped. Thanks for sharing, but I won't make this again without serious alterations.

Turkey Jambalaya

I made the following substitutions: used a red bell pepper, forgot the onion, added mushrooms, non-spicy sausage, 2 bay leaves, and basmati rice. I also homemade my Cajun spice mix. This dish came out great. I did have to cook longer because my rice wasn't done in the time alloted. It was so simple to make though that I didn't mind waiting. This can also be made in a slow cooker, so it's great to make on a weeknight. Thank you for sharing.

Classic Tiramisu

The only change I made was that I used a processed mascapone cheese mixture with tiramisu flavor already mixed in because I couldn't find pure cheese. It was sweet and nicely flavored with Kaluha, especially after it sits for a few days. Even those who did not like tiramisu enjoyed this recipe. The tiramisu fanatic in the house gobbled up almost half the casserole dish in one sitting! Thank you for sharing.

Tofu and Veggies in Peanut Sauce

I personally felt that this recipe was not peanut buttery enough. i added garlic and scallions too. My lunch guest enjoyed it and said it was the right amount of flavor. (She's not too into strong peanut sauce.) We did add extra hot sauce, instead of cayenne. Thank you for sharing.

Tomato Chicken Parmesan

Wow, what a great recipe. I forgot to saute the chicken breasts before immersing in Prego sauce, so I baked it for 40 minutes instead. They were thin breasts, and came out perfect. Everyone said it was the best they've ever had, like restaurant quality. The chicken melted in our mouths. Also took one commentator's advice and refrigerated the coated breasts for 30 minutes. It really held together. Thanks for sharing.

Sri Lankan Potato Curry

This dish was aromatic to make and tasty to eat, especially when the potatoes are simply warm. I found that I had to use the whole 13.5 oz can of coconut milk and cook the potatoes 15 minutes longer, despite having microwaved them previous to putting them in the pan. Other than that, it was wonderful. I love coriander, both the seeds and the plant. It was great. Thank you for sharing this. P.S. The flavor doesn't keep well after it's been refrigerated for a few days.

Basic Vegetable Stock

This was the tastiest vegetable stock I ever made. Amazing how something so simple can turn out so yummy. I added some mushrooms and bay leaves, and substituted dill for the thyme and parsley. I didn't even need to add any salt. It was great. Thank you so much for sharing. I will definately make this again.

Applesauce Noodle Kugel

This kugel is the third recipe I've tried so far and I just can't seem to find one that I like. The first two were not sweet enough and this one was too sweet. I used cranberry applesauce and more lemon juice because I like it tart, but I think I will cut down on the amount of sugar next time. Also, will cover with foil next time because the top part of my noodles "crispified" (burned). Thanks for sharing though.

Tuna Noodle Casserole II

I made a lot of changes. I didn't have cheese or potato chips, so I left them out. I substituted with cream of chicken with herbs. I added 10 ground allspice berries, and ground Hugarian sweet paprika in with the mix, along with some salt and pepper. The recipe came out spicy and savory, without a heavy tuna flavor. It was great. I think the evaporated milk was what made the dish so special. It probably wouldn't have occured to me to do that. Will make again. Thanks.

Italian Chicken with Garlic and Lemon

I scaled this recipe down to serve four. I used drumsticks instead of thighs, as that is what I had on hand, and I omitted the potatoes. I found this recipe to be savory and sour. I added more garlic to the mix and would probably use less oil next time. The garlicky aftertaste is good too. I also needed to cook it longer than stated. Thanks for sharing this with us.

Honey Roasted Red Potatoes

These were great potatoes, but I think I should have added more honey because they didn't come out as sweet as I would have liked. I was too lazy to grind the mustard seeds, so I used them whole and it gave a nice crunch. Although, this meant there was no fusion of honey mustard sauce. It came out great anyway. Thanks.

Moroccan Chicken

I didn't exactly follow the recipe to a T. I used a whole bunch more vegetables than amounts given. Also, I used instead, one can chicken broth, the liquid from the can of chickpeas and a can of diced tomatoes, undrained. This is probably why it was so soupy, but luckily I just drained it and labeled the excess liquid Moroccan Tomato Soup. (That was yummy too.) I didn't have zucchini available, so I just omitted it. I also am in the habit of marinating the chicken ahead of time, like my mom taught me, with salt, cayenne pepper, and cooking sherry (just enough to wet it) and letting it sit for an hour in the fridge. I think next time I will marinate with white vinegar instead to give it a sour twist. Also used the juice of a whole lemon. It was a little spicier than I had expected because I used cayenne to marinate on top of the 1/4 tsp cayenne in the recipe, but we like it hot here. It got a great review from my family and I am sure to make it again. I had some of my special Cornbread with Anise Seed leftover and served it with dinner. The sweet, licorice flavor offset the spicyness beautifully and it sopped up the sauce too.
