I tweeked this recipe with what I had and it turned out GREAT... I only used 1/3 c of flower and it was plenty thick. I used two 14 oz cans of chicken broth and 3 c of 2% milk. I chopped up a small yellow onion and 4 cloves of garlic and sauteed them in the bacon grease and added. I did not have cheddar cheese so I used 14 slices of American and 1/3 of a small container of chive and onion cream cheese (it gives amazing flavor) and then added salt, pepper, basil, oregano, and a little paprika. I had 5 baked potatoes (I rubbed with olive oil and sprinkled salt, oregano and basil on them before baking). I LEFT THE SKIN ON and cubed 3 and smashed up two. This makes it a good consistency while leaving some hearty chunks. Hope this helps!
