Chicken Breast Mediterranean

I made this for dinner with a friend who is a celebrated gourmet chef. We used regular olive oil, added some red wine vinegar just before putting it in the oven, and added some black trumpet and shitake mushrooms. I think you could add any kind of mushrooms. Although she was a little dissapointed that I only had canned tomatoes, the recipe was AWESOME. I used the whole can of artichokes and the whole 4 oz package of feta. I served it over tri-colored De Cecco Penne pasta. EVERYONE raved about it. This was very easy -- and tasted just fabulous. TRY IT!!

Vidalia Onion Pie

I cut the recipe in half and used a deep dish pie shell. I added about 1 teaspoon of Worchestershire sauce to the ingredients. I put about ΒΌ teaspoon of Paprika into the sauce mix and used it liberally on the top. I used freshly ground Parmesan cheese. It was delicious!! Even my husband (who dislikes onions) said this recipe is a keeper.

Sugar Snap Peas

Great tasting, easy, and doesn't make a mess! I added some grape tomatoes to the recipe (whole grape tomatoes or cherry tomatoes are fine) to add a little more color to things.

Awesome Slow Cooker Pot Roast

Blue Cheese Beef Tenderloin

I made this recipe for a dinner party and it was wonderful. Lot's of reviewers said that they didn't use the marinade recipe (just the blue cheese sauce), but the marinade was EXCELLENT. I cooked a 6lb. tenderloin roast from Sam's Club and doubled the marinade. I let it sit in the marinade for 3 hours before roasting. It was perfect. I also cut the roast in half to help ensure more even cooking. Not everyone tried the sauce, but those that did LOVED it.

Pork Roast with Thyme

This was an extremely easy recipe and it turned out delicious. Like many other reviewer, I used half balsamic vinegar and half cider vinegar. Watch the cooking time closely (mine cooked much faster). The roast was juicy, spicy, and everyone loved it. Don't worry about making too much; the leftovers are just as good as the first day.

Irish Potato Casserole

This was easy and delicious. However, it took considerably longer than 45 minutes to cook at 350 degrees in my oven (at least 1 1/2 hours). Everyone loved it!

Beef Pepper Steak

This was a quick and easy recipe. I used regular Soy Sauce instead of Tamari. This is the first steak I have cooked anywhere other than my BBQ and enjoyed. If snow or rain is keeping you indoors, this is a great recipe to try. VERY EASY!
