Rice Pudding

As a Latino I've eaten my share of Rice Pudding. This one was pretty good. However it was too much milk. It depends on how thick you want your pudding to be. Traditional Latin Rice Pudding is pretty thick and firm so I used 1 1/2 Quarts of milk (which includes the 1 cup to mix with the eggs and sugar). I also added 2 teaspoons of cornstarch to the sugar. Also, for me, the best rice to use is short grain rice or pearl rice. The best results come after setting up in the refrigerator overnight. As an added note I've made this with Fat Free Milk 2% and Splenda and it also came out wonderful. Just an idea.

Classic Peanut Butter Cookies

I've made these Peanut Butter Cookies a few times and they are always a hit with my family. I added peanut butter chips to the recipe and it was still awesome

Irish Cream Chocolate Cheesecake

Ok, this turned out really awesome!!!! Only two changes. I used 1/2c of Baily's instead of the recommended 1/4c. And since I was using a 10" spring form pan, I baked for only 50 minutes instead of an hour. It turned out moist and rich and it was the rave of the luncheon at work. Eat Your heart out Paula Deen!!!! hehe

No Bake Peanut Butter Pie

I didn't this would turn out great actually. I followed the recipe as is and it was really. I was pleasantly surprized. The only bad thing was waiting for the pie to set to I made it late and enjoyed it the next day. Was Awesome.

To Die For Blueberry Muffins

I made this recipe with my 8 year old daughter on a Saturday morning... I was kind of skeptical seeing that the batter was really thick and added some buttermilk. The muffins turned out fantastic. Expecially the sweet crunchy topping! I felt inspired and made the same recipe on Sunday night to bring to work with me the day after. Instead of Blueberries, I used semi sweet chocolate chips... It was a hit! This recipe can work with chopped apples too. Gosh the possibilites are endless.

Carrot Cake

I wish I could give it more stars... I made a couple of changes. Only used 1 cup of vegetable oil, added 1 tsp of baking powder and took OUT the walnuts. (yuck). As for the frosting I used a recipe on here called Cream Cheese Frosting II... it turned out amazing!!!! I brought it to work the next day and my co-workers see me as some Betty Crocker of sorts... I told them that I'm kind of a big deal around here. hahahahaha. JK.

Easy Peach Cobbler II

This recipe turned out really good. However it was really really sweet. Next time I make this I would cut the sugar to 1 cup and make sure the peaches are either freshly cut myself or a can with no sugar added. Other than that it turned out really good.

Bread Pudding II

Exellent Recipe... I ended up using Challah (Jewish) Bread and it was amazing. It created a nice semi crunchy top with the sweet underside. It's even better the next day after being in the fridge with some coffee. (also I left the bread soak up the mixture for a bit before baking and the raisins plumped up too)

Oatmeal Raisin Cookies VI

This is AMAZING!!!! love, love, love oatmeal raisin cookies. This recipe is so easy to follow and they turned out awesome. My boyfriend kept sneaking in the kitchen to steal more... I caught him in the act. haha.

Sweet Potato Pie VII

This was so good that I was afraid of eating the whole thing. I doubled the recipe and took the 2nd pie to work the next day. My coworkers really enjoyed it. It was a bit too sweet.. so next time i'll use 3/4ths of the recommended sugar.

Easy Meatloaf

This was a hit with my family... the only thing I would change is using half of the recommended brown sugar to bring down the sweetness a tad. Other than that it was amazing.

Pumpkin Pie Bread

I made this as a surprize for my boyfriend. It turned out perfect actually. I used a scoop of Vanilla Ice Cream on top of a thick slice and it made it even more perfect. This is really easy to make and the pumpkin can be substituted for Mangos or Bananas too... (using nutmeg instead of pumpkin spice).
