Bill's Beefuna Burgers

I don't know what everyone is raving about. You can DEFINITELY taste the tuna in these burgers. Mine also didn't turn out very moist, just a very dense, dry burger that stunk like tuna when reheated. I put everything together like it said, but something went wrong. I won't be making these ever again - a waste of tuna and hamburger.

Spicy Sausage and Rice Casserole

Delicious and spicy! I used only 16 oz. Bob Evans zesty hot sausage, 1 cup regular white rice instead of wild and a quart of home-canned tomatoes and it turned out well. I also cut the cayenne pepper down to 1/4 tsp, just to be safe and it was still quite spicy. Picky hubby says it's a keeper, so it gets 5 stars!

Candy Cane Cheesecake

This was delicious! The only thing I would change would be to sprinkle the crushed candy canes just before serving, as they half-melted in the fridge overnight and looked kinda icky. But it tasted great - the whole family liked this for the Christmas dinner dessert.

Crackle Cookies

When I made the dough, I thought something was wrong because with 1/2 cup flour, it was more like cake batter, but I figured refrigeration would help. It did, but it was still gooey. I had high hopes for these because they look pretty and were going to be for a cookie exchange. I'm glad I tried out the recipe first because they lack flavor. They're not chocolately, though they look it, and they're not all that sweet either. Definitely NOT going to the cookie party - sorry!

Candied Flowers

My flowers ended up crusted with sugar and never really dried. A confrence with my mom suggested that I used too much egg white (she knew the recipe by heart!), but I won't try this again. Too much work and expensive ingredients.

Citrus Cheesecake

I made a chocolate graham cracker crust instead of the one in the recipe, but otherwise followed the recipe exactly and the result was wonderful. My picky husband said it was really, really good (a huge compliment from him) and that it was probably the best cheesecake I'd ever made! And it was easy to make, too. Update: Took this to a fund raiser bake sale and it brought in the most $$ and had a bid placed by almost everyone there!

Cranberry Bundt Cake

Delicious! My cranberries did migrate towards the bottom of the pan (top of the cake), but they didn't make it all the way down/up and it still tasted wonderful. I took this to a potluck at work and everyone loved it. I think this would be delicious as a coffee cake for breakfast, though we ate it for dessert.

Graham Cracker Cookies

I rarely have trouble with temps and times in my oven on recipes, but this one I did. At 8-9 minutes, the cookies were done on the edges, but raw in the middle. At 10-11 minutes, the edges were starting to brown too much and the centers were still way too gooey. I left the on the cookie sheet for longer than stated as well, and the centers set up a little, but were still gooey. Maybe a lower temp for longer? Still a very tasty cookie. The graham cracker crumbs add a nice flavor, once you get past all the chocolate!

Chocolate Covered Orange Balls

When making the "dough" for these, I tasted it and it was so familiar, but I couldn't figure out where from. A confrence with my mom sorted things out - growing up, she'd made the exact recipe only rolled them in powdered sugar. I think the chocolate was a welcome change and the whole family agreed. Thanks for posting this!

Herb and Chicken Pasta

The chicken was delicious. The pasta lacked flavor; it definitely needs to be seasoned somehow, as the "sauce" made from broth, onions and garlic doesn't do enough for me. But the seasonings on the chicken were great and at least that portion of the recipe is a keeper! Update: leftovers were better, well the pasta (chicken was still great). The pasta soaked up some of the sauce and gained a nice flavor overnight.

Mexican Salad

Another recipe my picky husband liked! I used canned corn because that's what I had and it had a funky smell (as canned corn does), but it didn't taste that way. Overall, a nice change in side dishes for Mexican foods from my usual chips and salsa.

Quesadillas I

We added chicken to make this more of a meal and added a little taco sauce to keep them moist, but they were great! The basic recipe is nice to tweak to tastes - I had ingredients sitting out and my picky hubby put in what he liked for his and I put in what I liked for mine. We'll definitely be making these often.

Chocolate Covered Cherry Cookies II

These cookies are very good. Very chocolately. But I don't think they taste like chocolate covered cherries all that much (so I took away a star). The dough scared me a little because it didn't want to come together at first and looked very dry and crumbly, but after a bit more mixing, it turned into a nice, soft dough that formed easily into balls. The picky hubby approves, too!

Cranberry Orange Oatmeal Cookies

These are THE BEST oatmeal cookies I have ever tasted. I will never make plain oatmeal raisin cookies again. I'll splurge on the dried cranberries and enjoy every bite. If you haven't tried this recipe, you should. Thank you SO much for sharing!

Creamy Turkey and Biscuits

I used celery instead of green pepper, corn instead of peas (a freezer oops) and cream of potato instead of mushroom soup, but otherwise kept the ingredient list the same and the filling was great! After reading that the biscuit/filling ratio was a bit off, I decided to use a smaller pan and fewer biscuits (about 8x8 with 9 biscuits), too. But the biscuits looked overdone halfway through the baking time, but were gooey inside. So next time, I may follow the cooking temperature on the biscuit tube (it was lower than stated here), or maybe try baking the biscuits first to avoid the underbaked-ness that my hubby was unhappy with.

Grandpa McAndrew's Irish Soda Bread
