Broccoli Cheese Soup

Potato Bread II

Excellent! My bread machine seemed to have a little trouble mixing it at first, but it turned out great. Even my picky husband (who hates this site because he's become a guinea pig) loved it and asked for more!

Apple Brownies

Tropical Lime Cake

Pretty good. I used a vanilla cake (what I had) and did two round cakes for a layer cake and it turned out well. Used box directions for a better guide to cooking time. I also made frosting using a tub of Cool Whip and some lime Jello (as others suggested), then garnished with grated lime peel, a lime slice and sliced strawberries. The Jello was a little granular in the Cool Whip to start, but by the time we ate it, it had dissolved. Would make it again, but probably not because there's just too many other recipes here to try!

Delicious Black Bean Burritos

Excellent! I added baked, shredded, seasoned (store packet) chicken and a bit more cream cheese and it was great. Also made a box of Spanish rice that we ended up putting inside that made it even better. Could have used more beans, though, after all my additions, but picky husband said I could make it as often as I like!

Chicken and Lentils

Good overall. I used boneless, skinless chicken breasts and they were a little dry in the middle, so next time I'll try thighs. The lentils were a bit bland (sauce was good, but too many lentils in a bite and it lacked flavor), so next time I think I'll add the spices when I return the chicken to the skillet, or maybe even earlier.

Graham Cracker Cookies

I rarely have trouble with temps and times in my oven on recipes, but this one I did. At 8-9 minutes, the cookies were done on the edges, but raw in the middle. At 10-11 minutes, the edges were starting to brown too much and the centers were still way too gooey. I left the on the cookie sheet for longer than stated as well, and the centers set up a little, but were still gooey. Maybe a lower temp for longer? Still a very tasty cookie. The graham cracker crumbs add a nice flavor, once you get past all the chocolate!

Key Lime Cookies II

Flavor was pretty good, but that's where it stops. Batter/dough was thin, as others mentioned, but I thought rolling in corn flakes would help. It didn't. Corn flakes helped keep cookies from sticking even more to pan (and my fingers), but only ended up around the edges of the top of the cookie and looked funny. I baked a few without corn flakes because I ran out and didn't feel like crushing more and those were lumpy blobs once I scraped them off the cookie sheet. They took about 5 minutes longer to bake than stated and I'm not sure they were done then. I cooled them on a rack, but they were still chewey and after putting them in an airtight container, they're now one big messy lump. The flavor tells me this recipe may have potential, but I'm not going to waste my time or ingredients figuring out how.

Candied Flowers

My flowers ended up crusted with sugar and never really dried. A confrence with my mom suggested that I used too much egg white (she knew the recipe by heart!), but I won't try this again. Too much work and expensive ingredients.

Farmer's Ranch Potatoes

I used Yukon Gold potatoes that were rather large, so I zapped them in the microwave until done. The ranch/sour cream mixture didn't seem to be enough, so the whole dish was dry, but maybe boiling the potatoes would have solved that problem. My husband also ate almost all the corn flakes and I didn't realize it until I went to use them, so I substituted plain bread crumbs and the topping looked fine. Overall, pretty good, and I think I'll give it another try - this time as written!

Whit's Chicken Enchiladas

I was a bit skeptical at first, with only cheese and cream for sauce and kept a close eye on them in the oven, but they were delicious! I shredded the chicken and skipped the jalapenos (I like to add hot stuff after rather than chance it being too hot to start with), but otherwise followed the recipe exactly. Just what I was craving and pretty good left over, too!

Delicious! I made this to use up some grape tomatoes that were starting to go bad, so I think the ratio of oregano to tomatoes was a little off, but still good.

Quesadillas I

We added chicken to make this more of a meal and added a little taco sauce to keep them moist, but they were great! The basic recipe is nice to tweak to tastes - I had ingredients sitting out and my picky hubby put in what he liked for his and I put in what I liked for mine. We'll definitely be making these often.
