Asian Orange Chicken

Reviewed: Mar. 28, 2006
Delicious! Definitely a keeper. I added broccoli, as others suggested, and served over rice and it was wonderful.

Grilled Caribbean Chicken Breasts

Reviewed: Mar. 28, 2006
Though I marinated the chicken for about 10 hours, the middle was flavorless. There was a bit too much bitter orange taste for me as well.

Grandpa McAndrew's Irish Soda Bread

Reviewed: Mar. 26, 2006
I didn't know what to expect, but this was good. Sweet and not too dry. I took it to a St. Patrick's Day party and everyone liked it (even those who had had soda breads before).

Italian Chicken with Pesto Potatoes

Reviewed: Dec. 29, 2005
Just an okay dish. The chicken lacked flavor and I think if I make it again, I'd add some seasoning in with the cheese. Picky hubby liked the ham and I thought the potatoes were the best part of it.

Bill's Beefuna Burgers

Reviewed: Dec. 21, 2005
I don't know what everyone is raving about. You can DEFINITELY taste the tuna in these burgers. Mine also didn't turn out very moist, just a very dense, dry burger that stunk like tuna when reheated. I put everything together like it said, but something went wrong. I won't be making these ever again - a waste of tuna and hamburger.

Spritz Orange Crisps

Reviewed: Dec. 21, 2005
Good, crunchy cookie, though not a lot of orange flavor. The baking time was a bit too long for my cookies - the first batch came out a bit too done. Overall, a good spritz cookie recipe to keep on hand.

Spicy Sausage and Rice Casserole

Reviewed: Dec. 21, 2005
Delicious and spicy! I used only 16 oz. Bob Evans zesty hot sausage, 1 cup regular white rice instead of wild and a quart of home-canned tomatoes and it turned out well. I also cut the cayenne pepper down to 1/4 tsp, just to be safe and it was still quite spicy. Picky hubby says it's a keeper, so it gets 5 stars!

Orange Chocolate Swirl Cheesecake

Reviewed: Nov. 25, 2005
Delicious! I made this for my family for Thanksgiving and it turned out nicely. I added 1 tsp. orange extract as another reviewer suggested and the orange taste was subtle, but definitely there. Everyone loved it, even the kids.

Spiced Apple Muffins

Reviewed: Oct. 21, 2005
These muffins were awful. They were dense and the outside was chewy. They were also lacking flavor (which I don't believe was due to my leaving out the anise seed). I should have read the reviews first, but was in a hurry to make something to go with dinner and now I'm sorry.

Strawberry Nut Bread

Reviewed: Sep. 29, 2005
Delicious and moist. I didn't have veg oil on hand, so I substituted with 1 1/4 cup homemade applesauce and it turned out wonderful and healthier. I will make this every time my husband buys too many strawberries!

White Chocolate Macadamia Nut Cookies II

Reviewed: Jun. 29, 2005
Great cookie! I used double the white chocolate chips and hazelnuts (thought they were macadamia until they came out of the freezer) and, though very sweet, they turned out well.

Potato Chip Cookies VI

Reviewed: Jun. 17, 2005
Maybe it was because I used kettle cooked potato chips, but I could really taste the potato chips in the cookies. The mix of salty/sweet wasn't balanced and the unexpected chip taste made me send the cookies to work with my hubby, whose coworkers will eat anything. I wish these had been better because they looked nice.

Mexican Salad

Reviewed: Jun. 13, 2005
Another recipe my picky husband liked! I used canned corn because that's what I had and it had a funky smell (as canned corn does), but it didn't taste that way. Overall, a nice change in side dishes for Mexican foods from my usual chips and salsa.

Quesadillas I

Reviewed: Jun. 13, 2005
We added chicken to make this more of a meal and added a little taco sauce to keep them moist, but they were great! The basic recipe is nice to tweak to tastes - I had ingredients sitting out and my picky hubby put in what he liked for his and I put in what I liked for mine. We'll definitely be making these often.

Cherry Tomatoes

Reviewed: May 10, 2005
Delicious! I made this to use up some grape tomatoes that were starting to go bad, so I think the ratio of oregano to tomatoes was a little off, but still good.

Cincinnati Chili I

Reviewed: Apr. 28, 2005
Didn't care for this much at all. Probably just my tastes because it smelled great and looked good, but I couldn't eat much of it.

Whit's Chicken Enchiladas

Reviewed: Apr. 28, 2005
I was a bit skeptical at first, with only cheese and cream for sauce and kept a close eye on them in the oven, but they were delicious! I shredded the chicken and skipped the jalapenos (I like to add hot stuff after rather than chance it being too hot to start with), but otherwise followed the recipe exactly. Just what I was craving and pretty good left over, too!

Farmer's Ranch Potatoes

Reviewed: Apr. 19, 2005
I used Yukon Gold potatoes that were rather large, so I zapped them in the microwave until done. The ranch/sour cream mixture didn't seem to be enough, so the whole dish was dry, but maybe boiling the potatoes would have solved that problem. My husband also ate almost all the corn flakes and I didn't realize it until I went to use them, so I substituted plain bread crumbs and the topping looked fine. Overall, pretty good, and I think I'll give it another try - this time as written!

Candied Flowers

Reviewed: Apr. 18, 2005
My flowers ended up crusted with sugar and never really dried. A confrence with my mom suggested that I used too much egg white (she knew the recipe by heart!), but I won't try this again. Too much work and expensive ingredients.

Key Lime Cookies II

Reviewed: Apr. 18, 2005
Flavor was pretty good, but that's where it stops. Batter/dough was thin, as others mentioned, but I thought rolling in corn flakes would help. It didn't. Corn flakes helped keep cookies from sticking even more to pan (and my fingers), but only ended up around the edges of the top of the cookie and looked funny. I baked a few without corn flakes because I ran out and didn't feel like crushing more and those were lumpy blobs once I scraped them off the cookie sheet. They took about 5 minutes longer to bake than stated and I'm not sure they were done then. I cooled them on a rack, but they were still chewey and after putting them in an airtight container, they're now one big messy lump. The flavor tells me this recipe may have potential, but I'm not going to waste my time or ingredients figuring out how.
