Irish Cream Chocolate Cheesecake
Because my oven has a convection that runs the fan even when you are not cooking convection, I cooked the first 10 minutes at 425F rather than 450F. I baked the cake in a glass bottom springform pan, from Germany. The springform pan was placed in a cheesecake moat. The cheesecake moat is a pan within a pan. That allows the springform to be sour rounded by water without touching the water. After baking I left it in the oven four hours. I am very pleased with the results. (Also used a 1/2 cup of Bailey's)

Double Layer Pumpkin Cheesecake
Made for the first time today. I didn't change a single ingredient, however, I used a "Cheesecake Moat" to augment the baking process.the moat is a pan within a pan. You put boiling water in the moat. It adds a deeper consistent penetrating heat while keeping moisture in the air. The pie was done in thirty five minutes. Our guests couldn't believe that I made it at six this morning. It is simple and provides a fantastic dessert for family and guests.

Kaese Spaetzle
This is the real deal. After several trips to Germany we were addicted to Sauerbraten and Spaetzle. This recipe takes us back every time we have it. We change nothing the recipe is right on. We use a stainless steel Spaetzle press and a spider to pull the noodle/dumplings from the boiling water. Every time we make it we complain about the cheese sticking to the pan. We keep saying, next time we won't add the cheese until after we fry the Spaetzle with the onions. But we haven't yet. Just made it today. We had Sauerbraten made in our pressure cooker and the only Spaetzle we use.
