Mexican Turkey Burgers

These were good. My 5 y.o. does not eat veggies, so I have to hide everything when cooking. I skipped the onion and green pepper since the salsa had those in there and pureed that with the corn and added several tbsp. of that mixture along with several tbsp. of refried beans to the ground turkey and then made the patties. I also used only 3/4 of the taco seasoning in the mix and added the rest to the bread crumbs. I used a little olive oil and pan fried them for several minutes on each side and finished them in the oven. We all enjoyed them.

Slow Cooker Italian Beef for Sandwiches

Added 2 packets of dressing mix - do not add any of the salt products. It is not needed. Also added about 10 whole pepperoncinis along with 1/3 of the juice. Served on hoagie rolls with provolone cheese and broiled to melt the cheese and then put on a horseradish/ mayo sauce. Very good.

Cream of Mushroom Soup I

This was a great soup. Didn't add the sherry and didn't put it through the food processor. Was great just that way. Actually ended up doubling the recipe to have enough for dinner and leftovers for lunch at work the next day.

Hot Artichoke and Spinach Dip II

This was a good dip. I added a little bit more mayo because I wasn't sure that it was creamy enough. It turned out perfectly. Even better the next day when reheated.

Marbled Pumpkin Cheesecake

I think this recipe is a good start for a pumpkin cheesecake. The consistency was great, however, I would have preferred more of a pumpkin taste. I will adjust it accordingly next time. I also don't think the gingersnap crust is necessary. I will more than likely just use a graham cracker crust next time.

Mushroom Pork Chops

This was a great recipe. I used garlic powder instead of garlic salt and only had sliced baby bella mushrooms, but the pork was tender and the sauce was great. Served over rice and it was a great meal.

Pecan Pie V

This was my first attempt at pecan pie and how easy was this. I liked the fact that the pie wasn't too sweet, which is how most pecan pies are. The only thing I think I would do different next time is not chop the pecans and would add extra to the top to make a pretty presentation.

Pan-Fried Asparagus

I made this last night and it was delicious. I've never made asparagus before and I think I overcooked it a little bit, but the flavors were wonderful. I enjoyed it immensely and ate it as a side dish to grilled tilapia. Thanks for sharing.

Blueberry Cream Muffins

I've never made homemade blueberry muffins before, but these were great. They were moist and light. I got 2 1/2 dozen out of the batter and sprinkled sugar on top before baking. I will definitely make them again.

Banana Bread

The bread turned out great. I made it and took it along with some other breads to a get-together and the banana bread went first. I also added some vanilla and made it in one loaf pan. I didn't know how it would turn out because the batter is pretty thick, but it was great.

Focaccia Bread

This was a good bread recipe. Very easy and quick to prepare and it tasted great. I did not add mozzarella cheese, but added some coarse salt and the parmesan cheese and it was great. Of course, we dipped in olive oil just like the italian restaurants and it was fabulous.

Creamy Kielbasa and Potato Soup

This was okay. My husband hated it, but he is not a fan of potato soup. The taste was fine, but it needed something else to make it something special and to make it more of a heartier meal. Maybe the addition of noodles as a prior reviewer stated or thicken it up more and serve over rice. Just by itself is not enough.

Country French Beef Stew

I had never made Beef Stew before, but I will make it now after trying this recipe. I used this recipe as a guide because my husband is picky and won't eat onions or carrots in anything. After all the meat was browned, I used beef broth instead of the wine to deglaze and then added the rest of the broth, beans and a package of beef stew seasoning. When it was time to add the veggies, I used mushrooms and potatoes. I did need to add more liquid after adding the potatoes, but the beans thickened the stew nicely. I served this along with homemade dinner rolls.

Cauliflower Casserole

I wasn't that impressed with this recipe. It was rather spicy from the red pepper flakes, so those could definitely be cut down along with the bread crumbs. It also was on the high fat side, the bottom was swimming in butter. I also ended up adding extra cheese to it because once the topping was eaten, the rest of the cauliflower was plain.

This was excellent. A neighbor passed on lots of fresh veggies from her garden and I figured this would be an excellent way to use them. I did use a lot of veggies and had to use more broth, but the end result was great. I used fresh from the garden squashes (3 varities), potatoes, green beans, and tomato. I also used crushed tomatoes in puree instead of the tomato sauce. I served it with crusty french bread and it was great. I just wish I had enough veggies to make another pot.

Roasted Garlic

Sorry, my husband and I did not like this. It was easy to prepare, but I think the temparature and time needs to be increased. I can't say the recipe was bad, I think we just prefer our garlic the regular way.

Jalapeno Cornbread

I did as others suggested and increased the amount of peppers used in this bread and it turned out good. I was disappointed in how small the loaf turned out, but it may have had something to do with the express setting I used on my bread machine. My husband enjoyed it a lot and liked the kick the jalapenos gave it.

Cantaloupe Bread with Praline Glaze

This bread was great and really moist. I was apprehensive to make because of the odd use of cantaloupe, but I was so glad that I did. It was excellent. I did as another suggested and just added the pecans to the batter and skipped making the glaze. I made mini loaves of this bread for a bake sale at work and everyone who bought it loved it. I even surprised my husband, who hates cantaloupe, but loved the bread.

Butterfly Honey Pork Fillets

I really liked this marinade. I ended up using a little more honey to give it a slightly sweeter taste. I couldn't believe how well these ingredients went together. I also marinated the pork all day long and they turned out great.
