White Cheese Chicken Lasagna

DELISH! My only real adjustment was adding about a half cup of white wine to the sauce. I actually used uncooked whole wheat lasagna noodles and it came out just fine. (We like our lasagna a little on the dry side... not soupy at all.)

Sweet Corn Cake

Alabama Slammer II

We offered this as one of the signature drinks at our daughter's baptism reception (Baby Bama Slammers), and they were a real hit. I couldn't believe how many people commented on how great they were (even a LOT of men switched to drinking these). The bartenders had to make several batches throughout the night. We added a little pineapple juice to sweeten it up a little.

To Die For Blueberry Muffins

I've made these multiple times. The first time, my family said they're "okay" or "pretty good"... But when I made them again (no changes at all), they can't believe how good they are. My only explanation is that it must be in the quality of the blueberries. My best results have been with fresh blueberries.

Toddler Muffins

These are great. I've followed the recipe exactly as well as changed it up for what I have on hand and it has always been a hit. Adults love them just as much as the little ones. I like to keep a few jars of banana baby food on hand for times when I don't have enough ripe bananas.

Prosciutto Wrapped Asparagus

The whole family really enjoyed this. My husband comments every time I make this, "Why can't the restaurants make asparagus this good?" Its a quick little side that makes your plate look like a fancy meal! (I've substituted onion-flavored cream cheese with great success.)

Pumpkin Ravioli

We really enjoyed this recipe. My only adjustment was adding a little sugar to the filling because we like things like this on the sweeter side. I've made the whole recipe (including the pasta) as well as taken the short cut of using won tons. They're delicious with a little brown butter sauce and sprinkled with Parmesan cheese and pair nicely with any number of meat/main dishes.

Broccoli Cornbread with Cheese

Made this for my picky husband (who literally gags at the smell or taste of broccoli) and he loved it. His exact word: "INCREDIBLE." My only alteration: cut back cottage cheese to 1 cup and added 1 cup shredded cheddar to the batter and sprinkled about another half cup on the top. I had this wonderful concoction growing up, mainly at potluck socials or family gatherings. I had never made it myself and am so happy this turned out just like I remembered it.

Sausage Balls II

I have made these many times. The key is to use the hot or spicy sausage (Jimmy Dean or Tennessee Pride brands are good) and use extra sharp cheddar. Everyone raves about these every time I bring them to parties or make them on game day. I am careful not to over-bake them to keep them moist. Sometimes I throw all of the ingredients in a food processor to save time which seems to make them a little more moist. If you do it by hand, just be sure to keep working the ingredients together until really moist (kneading it a little). This should keep them from getting too "cakey" and drying out.

Basil Tomato Soup

GREAT SOUP. But I must admit I did step outside of the recipe ever-so-slightly. I sauteed some onion in the butter until nice and soft (mainly because I just love to start a recipe with sauteed onions)... then added the tomatoes, broth, and sugar. (I actually used stewed tomatoes because they have more flavor.) Instead of using just whipping cream, I used just a little cream and mostly mascarpone cheese (only because I like more of a thick bisque-like consistency... this makes it creamy without thinning it out). It was delicious, and I completely forgot to add the basil! I look forward to trying it again and remembering the star ingredient.

MMMMM... Brownies

I have been searching for a "go-to" brownie recipe for the last year. (My favorite mix -Martha White Chewy Fudge- was discontinued). I have tried so many mixes and recipes only to be disappointed in the flavor or texture.... UNTIL NOW!!! I followed this recipe exactly and they had the perfect flavor. (I took them out at 25 minutes exactly.) I may try using brown sugar next time to see if I can make them just a little chewier. I do not like cakey brownies at ALL, so I wouldn't say these were like cake... I just wouldn't mind them being just a little chewier.
