Stuffed Cabbage Rolls

I have made this a handful of times this summer, and we LOVE it!!! I follow Mary Domaz's recommendation on the homemade sauce in place of the tomato soup. I usually double the sauce. I replace the beef with ground turkey, and I use a wild/brown rice blend in place of the white. I also prepare the rolls and place in a crockpot for 5 hours on low. DELICIOUS!!!! I think they are even better the day after. My husband loves taking these for lunch the next day.

Cherry Chicken Lettuce Wraps

Garlicky Baked Butternut Squash

This is one of my new favorite recipes! I had bought all the ingredients, and when making it, didn't read when the parm was used... so I ended up not adding it by mistake. However, it was so fantastic without that I tried it the second time... but decided it was not necessary. I have added extra garlic to my version as well. So delicious and so healthy. I could eat the entire dish myself!

Slow Cooker Taco Soup

I make this a couple of times a month as a double batch in my crock pot. Then I divide it out into single portions and freeze for my husband's lunches. It is one of our favorites! I make the following changes: - 1 lb shredded chicken in place of the ground beef (I boil the chicken breasts for 20 minutes, let them cool, then pull apart). - I use black beans in place of chili beans - I cut the tomato sauce back to 4 oz - I omit the water We like the soup to be more like a thick chili, which it is without the water. It is GREAT for dipping tortilla chips into... yummy!

Banana Pumpkin Bread

Wow!!! I was looking for something to use up some canned pumpkin, and this recipe fit the bill. However, I did revamp it to create some healthy muffins. I made some big changes, but these turned out AMAZING, and surprisingly light! I will be making these again and again! Changes I made to make these healthy muffins: - 1/3 cup unsweetened applesauce in place of the vegetable oil - Sweetener in place of the 1/2 cup sugar - 1 1/2 cups whole wheat pastry flour, 3/4 cup oats, and 1/4 cup wheat bran in place of the 2 1/2 cups white flour - 1/4 cup flax seed meal - 1 1/2 tsp baking powder instead of 1 tsp I ended up with 20 muffins filled 3/4 full. Baked at around 300F (my oven cooks hot). I am not sure how long they were in, but I believe they took about 30 minutes. A must try! Delicious!

Taco Seasoning II

I used this often! Mix up a double batch and keep it on hand so it is handy whenever you need it. This recipe best matches the store bought seasoning, and isn't too spicy as other recipes I've found. If you want to turn it up a notch, add more cayanne or chili powder.

Cheesy Potato and Corn Chowder
