Apple Pie

I love this pie because it's simple yet classic. I mixed all the dry ingredients extra and put it in a plastic baggie. Apple pie mix! I keep that, frozen pie dough (Mom's Pie Crust) and frozen sliced apples on hand. Pie couldn't be easier! I do have a problem with the filling bubbling over my lattice but that might just be baker's error. Just remember to use foil on your edges or it will burn.

Strawberry Pie II

I love to bake but the only person I have to share my goodies with is my boyfriend so I cut the recipe down to two servings. I used Mom's Pie Crust from this site and baked it in muffin tins. If you do this make sure you prick your crust so it doesn't puff up. I followed the recipe to a t except for the strawberries, I just eyeballed that and I added some lemon zest. I mashed the strawberries until I got the consistency I wanted and put them and the cornstarch mixture into the pot. The mixture thickened in less than 10 minutes so I didn't really time it out. When it felt thick enough I put the mixture into the pie crusts over sliced strawberries. I left them in the fridge for about four hours and they were perfect. My boyfriend liked this pie better than the Chocolate French Silk I made the night before!

Best Ever Banana Bread

My roommate didn't eat all of his bananas before they turned brown/black so he gave them to me to make banana bread. I looked through reviews on recipes for 2 days before I decided to make this one. I'm SOOOO glad I did. This recipe makes the most amazingly moist bread. I only changed the sugar. I only used 1/2 cup of white sugar and added 1/2 cup of brown sugar. I added cinnamon, vanilla and sprinkled the top with brown and white sugar and walnuts. My boyfriend said it was as good as his mom's!

Traditional White Bread

I can't believe I made bread! It wasn't as pretty as the pictures and I'm sure I messed SOMETHING up but it was edible and my boyfriend gobbled up at least half of the loaf I made. I did substitute AP for bread flour but that wasn't the problem. I'm sure with a little more practice this recipe will help me make some AWESOME bread! EDIT: I made this again and used the proofing directions on my package of yeast instead of reading the recipe. The bread turned out PERFECT. I will never buy bread from the grocery store again!

Victoria Sponge Cake

WOW! After failing (miserably) at another recipe for sponge cake for a strawberry short cake I came upon this jewel. To be honest, it's idiot proof. I baked my 4 servings in a muffin pan and they came out fabulous! They are soft and spongey with a light, sweet buttery crumb. It's a great recipe and I can't wait to make it again!

Chantal's New York Cheesecake

I honestly don't understand how you can get this recipe wrong. I used it for my first cheesecake (it was cracked but still delicious, I followed the recommended baking time and didn't take in consideration the changes ) and have used it 5 or 6 times since. I cheat and use a premade crust (because I'm lazy); just half the recipe and only cook for 45 minutes, it'll turn out perfect. I haven't had cracks since reducing the baking time and I never use a water bath. My boyfriend gets SO excited when I make this cheesecake, I can only hope it turns out as well for those reading my review.

Mom's Pie Crust

This is an AWESOME crust...I just thought it was a little too sweet. It was my first time making pie crust or a pie for that matter. I made a pecan pie that turned out horribly but the crust was delicious...I just ate all the crust off the edges. I'm gonna make another pecan pie recipe and use this crust with only half the sugar. Never-Fail Pecan Pie

Lucilky for me I decided to make a test pie first because I was bringing this to Thanksgiving dinner where I am to meet my boyfriend's parents for the first time. I follwed the recipe to a T but came out with a runny filling that tasted like vanilla extract. IF I try this recipe again I will add another egg and go a little lighter on the vanilla.

Cheesy Chicken Quesadillas
