Strawberry Cheesecake Muffins

Muffin itself is bland. I had hoped that the cream cheese mixture in the baked muffin would be creamier. The only part I liked was the homemade strawberry jam.

Strawberry Spinach Salad I

Very good! Used balsamic vinegar since we prefer it. This slightly sweet salad complemented spicy shrimp and rice.

Banana Cake VI

My cake took longer to bake as center was still not baked. Didn't place cake in freezer but cake still was moist. I made my own cream cheese frosting as the one listed seemed too rich for my taste.

Brisket with BBQ Sauce

Twice-Cooked Coconut Shrimp

I also had a difficult time getting the coconut to stick to the batter-many of the fried shrimp had uncoated spots. The overall taste was not impressive. The dipping sauce was too sweet for my taste.

Cinnamon Sour Cream Biscuits

I doubled cinnamon but I think a little more sugar would have also helped the flavor. I did use the sugar drizzle which did help the sweetness. Dough was a little too sticky so I had to add 1-2 Tbsp flour to make it manageable; maybe that decreased the flavorings.

Best Ever Blueberry Cobbler

Even though my blueberries were not so sweet to start off, the OJ & sugar really helped! I left the cobbler on the counter overnight (uncovered) & the crust was still a little crispy the next day. Next time I will double the filling.

Best of the Best Blueberry Muffins

My blueberries were not very sweet so I will increase the sugar next time. I also sprayed the outer edges of each muffin area before filling to avoid the muffin top from sticking to tray. Even though I filled batter to the edge of the paper liner, I ended up with 19 regular sized muffins and the tops were not as nicely domed as I would have like them to be. The crispy top looked & tasted great! Overall, a good muffin!!

Apple Banana Cupcakes

I followed the recipe as written & did not care for these cupcakes. They were heavy plus, the spices and sugar were not enough for my taste. Need to fill cupcakes about 2/3 or to the top to get a nice "dome shape". Sorry, but I won't be making these again.

Cream Filled Cupcakes

The filling was a little too sweet for my taste. But the cupcake itself was moist and had a good flavor. I have made them a couple of times and used different brands of unsweetened cocoa powder. Better quality cocoa powder equals better chocolate flavor. I rotated the pan halfway through baking.

Banana Sour Cream Bread

I also cut sugar amount in half as I had very ripe bananas. I have a dark colored 6 mini loaf pan which required about 65 minutes of baking. The loaves came out a little darker than desired-I think it comes from the loaf pan color. Otherwise, it's a good breakfast bread.

Banana Crumb Muffins

I've made them a couple of times for my husband's workplace. Everyone likes them-even my husband who does not care for banana bread. Only thing is that streusel topping melts while baking. Now, I added it about 10 minutes prior to the end of baking time.

Buttermilk Pancakes II

I had previously only used different supermarket pancake mixes. I tried a couple of pancake recipes on this website which were not nearly as good as this one. These are very light, fluffy and just right in sweetness. Even had these for "midnight breakfast".

J.P.'s Big Daddy Biscuits

Very good biscuits! I have made these several times without any modifications to the ingredients and always came out great. Only thing is that dough is very sticky so be sure not to add too much flour and to not knead too much. I knead the dough about 6 times and then pat the dough to about 1" thickness.

German Potato Pancakes

I squeezed out extra water from shredded potatoes by using a cheesecloth. Also doubled flour and salt plus added 1/4 C finely chopped fresh parsley. Be sure not to let the potato mixture sit too long or more water will be drawn out from the potatoes.

Italian Herb Bread I

Good change of pace from basic rolls for dinner. Used parmesan cheese as could not find romano cheese at the store. Does take a while for kneading but results are worth it. My loaves turned out soft, dense, aromatic and delicious without a crunchy crust.
