This salad is wonderful. I did make a change to it that made it even better. Since I was preparing the chicken for the salad, and not using leftovers, I decided to bake the chicken breasts whole. After they cooled, I shredded them and tossed the shredded pieces in a mixture of 1/2 cup soy sauce and 1/2 cup white sugar. Then I baked the chicken again for about 45 min at 375. The chicken was amazing! Almost carmelized and so flavorful. Please try it. It will make this great salad even tastier! Thanks for the recipe!
