Holiday Left-Over Sweet Potato Cake
I halved the recipe and made this with 3/4 cup mashed kabocha squash. I used 2 eggs, apple cider instead of beer, half whole wheat flour half all-purpose flour and half olive oil and half canola oil for the oil portion. I baked them in a mini muffin pan at 350 for 10 minutes. I came out with 48 total for just half the recipe! They came out great with soft fluffy centers and nice crispy tops. My boyfriend who hates squash even like them.

Puff Pastry
I didn't follow the directions and accidentally mixed all the ingredients in a bowl at once. It didn't matter--it came out perfectly! I baked them as mini tart shells in a mini muffin pan at 400 degrees for 7 minutes and filled them with sauteed mushrooms, scallions, garlic salt, extra virgin olive oil and a splash of red wine sherry. Topped with goat cheese. It was amazing. And the pastry shells taste great on their own!

Broccoli Cheese Cornbread
I doubled the recipe, substituted the onion for 1 cup of chopped chives, 3 extra large eggs, used fat free cottage cheese and used Trader Joe's Cornbread mix. These came out perfectly! I couldn't stop myself and ate half the pan. I can't wait to make them again, but this time in a mini muffin pan. 350 degrees for 15-17 minutes.
