No Bake Cookies III

Reviewed: Jun. 16, 2013
My husband loves no bake cookies - I used to buy them at Wal-Mart for him. I finally decided to make my own and found this recipe. He told me he likes these better than the store bought cookies! I read through hundreds of reviews and followed a few tips from other people, and these have turned out great every time. I did try reducing the sugar, per some reviews, but my husband and kids like them sweeter. I wait for the full boil, then start timing. I have found that it takes a little longer than the minute, maybe 15-20 seconds longer, probably has something to do with high altitude. I put the peanut butter on top of the oats and pour the vanilla on top of that, so that everything is ready to mix in when the boiling is done. I always have my husband help drop them onto the pans and have never had trouble getting them dropped before it hardens. He also cleans up all the drips :) Thanks for the recipe, and all the helpful reviews!

The Best Rolled Sugar Cookies

Reviewed: Dec. 13, 2011
Bad cookies. They would serve you well as a weapon according to my husband. He was laughing at how the cookies looked coming out of the husband. I balled up some dough and threw it at him. Let's just say if I had made the ball slightly bigger, I would have been laughing at him out cold on the floor. He has a welt where it tagged him in the forehead :)

First time making it, and it was wonderful! I love that it makes enough for my big family without having to double the recipe.

One Bowl Chocolate Fudge

Reviewed: Nov. 18, 2011
The are very easy and the texture of them is good when they cool. However, they taste a lot like eating semi-sweet chocolate chips. I'll keep looking for a good, easy fudge recipe.

Marshmallow Treats

Reviewed: Nov. 18, 2011
These are incredible! I have never made rice krispy treat before, and now I may never buy the packaged ones again. I made a couple additions after reading the reviews - 2 tsp. milk and 1 tsp. vanilla, added at the point where the marshmallows are almost completely melted. I also added an extra cup of marshmallows because I like them extra gooey. This will be a hit when the kids get home from school, I doubt there will be any left tonight. Thanks for the recipe!

Easy Honey Mustard Mozzarella Chicken

Reviewed: Nov. 9, 2011
Love, love, love this recipe. After reading through the reviews, I made a few adjustments. I made the sauce with equal parts honey and dijon mustard - make however much you want. I found that a little more than 1/2 cup each was plenty. I also omitted the lemon pepper, these had plenty of flavor without it. I used chicken tenderloins, so I reduced the baking time to 20 minutes and they were done but still moist. I cooked the bacon in the microwave while the chicken was in the oven, then crumbled it. I added the crumbled bacon and colby jack cheese to the top of the chicken, baked until the cheese was melted, about 7 minutes. My husband fell in love with me all over again for making this, and my kids actually ate something new! Definitely adding this to our dinner rotation.

Chocolate Chocolate Chip Nut Muffins

Reviewed: Nov. 4, 2011
I made a few of the adjustments that other suggested. I'm not sure how to describe how these came out... Maybe tough? Chewy? The texture of them was odd, and I thought they were a little too sweet and a little too chocolatey for a muffin. Next time I make them, I will not do the adjustments and see how they turn out. My muffins also collapsed in the middle, I'm thinking I may have overmixed them. To avoid that next time, I will mix the wet into the dry instead of the dry into the wet. I find it easier to do without overmixing.

Chocolate Chip Pancakes

Reviewed: Oct. 30, 2011
The kids loved these pancakes! My hubby and I weren't as thrilled with them, but I'm not a big fan of chocolate chip pancakes anyway. The were very dense pancakes - I'm not saying this is bad, they fluffed up nicely on the griddle, but they were still dense. Per other reviews, I added 1 tsp. vanilla and increased the chips to 3/4 cups. We didn't do the syrup, so I can't say how that was. Even though the hubby and I didn't care for them, I will keep this recipe for the kids.

Roasted Pumpkin Seeds

Reviewed: Oct. 30, 2011
Per the suggestions of others, I tried garlic powder on half the seeds and cinnamon/sugar on the other half. Nobody in my family liked the cinnamon/sugar coated seeds. My husband said he would like a little more garlic powder than I added, so I will double the salt and garlic powder next time (maybe a 1/2 tsp of each).

Chocolate Chip Muffins

Reviewed: Oct. 30, 2011
There are never any of these muffins left by the second day! My kids and husband love these muffins. I tried them with big chocolate chips last time, and my hubby said they are better with the mini chips. The things I change, as suggested by other, are a full cup of sugar, a full cup of milk, a full cup of chocolate chips, and add a tsp of vanilla. I also change the oil to applesauce and increase it to 1/2 cup. This can make the muffins stick to the cup lines, so I use cooking spray on the muffin cup liners. Thanks for the reviews, they helped me make a wonderful muffin!

Pineapple Chicken Tenders

Reviewed: Oct. 30, 2011
These are soooooo incredible! My whole family ate these very quickly. The only thing I changed was adding 2 tsp. garlic powder and 1 tsp. of ginger to the marinade. I also put the pineapple on the skewers with the chicken. Just the right combination of salty and sweet! Thanks so much for the recipe.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Oct. 30, 2011
These are absolutely the best chocolate cookies I have ever had. They look like something from a bakery, and taste better than a bakery cookie to me. I didn't make any adjustments to the recipe at all. The first time I made them, I used Nestle semi-sweet chocolate chips. The second time, I used Hershey semi-sweet chips. The Hershey chips made them way to sweet for me and my husband. I will definitely stick to the Nestle chips. Thanks so much for this wonderful recipe!

The Whole Jar of Peanut Butter Cookies

My husband and kids loved these cookies! I don't care for the texture of them. It is hard to explain, but they are very crumbly in your mouth. I'll keep this recipe, but keep looking for that peanut butter cookie recipe that makes all of us happy.

Triple-Cheese Macaroni

Reviewed: Oct. 30, 2011
My husband loved this recipe, and he doesn't like mac and cheese. All 4 of my kids gobbled it up! I used only half the mustard, and since the seasoned salt had pepper in it, didn't use any additional pepper. Turn out perfect! Will be making this again.
