Broccoli and Carrot Lasagna

My wife and I loved this dish (we are non-vegetarians). I did tweak this recipe a little bit: I substituted 1 can of cream of broccoli for one of the mushrooms, and I also scrapped the rosemary/paprika and instead opted for some "Italian" spice mix. It was great!

Alfredo Blue

I followed this recipe exactly as it said, and found it to be thin in consistency. I had to let it sit for a while until it seemed to thicken up at which time it was not very hot. I'm a beginner when it comes to cooking, so perhaps more experienced people will be able to fix that. The flavor is excellent, and I will make this again. I think next time I will try to add some lump crab meat to this for something a little different. But I recommend this dish!

Jamie's Minestrone

This is my first attempt at a minestrone, and it was a success! It ended up a little too thick, so I'll have to address that next time with more liquid. I did let this simmer for 60 minutes as I felt this let the zucchini and carrots soften a little more. I included the red wine (an $8 merlot...nothing expensive). My wife and I both enjoyed this recipe and would recommend it to all!

Blue Cheese Burgers

I scaled this down to a serving size of 4, and added a splash more Worcestershire. I also came home on my lunch and threw mixed the ingredients together. It then sat in the refrigerator for approx. 5 hours. The burgers were great! I bought 80/20 angus and it seemed to work well. My wife, NOT a fan of bleu cheese, ate 2 burgers! (She really only got one bite with a lot of bleu cheese...other than that she said it was spaced out well). Recommended!

Kentucky Pecan Pie

I made 2 pies (forgetting to put salt in one of them) and they both turned out excellent! My in-laws loved it...it was my first contribution to Thanksgiving! I'm giving this 5 stars due to it resulting in pies with great flavor and simple to make!

Brown Sugar Meatloaf

I have to admit this is probably the *best* meatloaf I've ever had. I pulled this recipe and my wife put it all together. If we would change anything in this recipe, I would maybe try to add a little minced garlic to the meatloaf itself. The brown sugar & ketchup makes a phenominal 'glaze'. I recommend this to anyone new to cooking...it is simple, but great!
