Buster Bar Ice Cream Dessert

I needed a fancy homemade cake, but my oven has broken down and this recipe came to the rescue. I did alter it, however. I used a 10 inch round pan, made extra crust and pressed it up the sides, doubled the ice cream (using chocolate and vanilla swirled together), I mixed chopped M&M's in with the vanilla icecream only, put one layer of ice cream, one of peanuts and one of fudge sauce, another ice cream layer, peanuts, sauce, then one more ice cream layer. I topped it off with this recipe: 2 cups cream, 1 cup icing sugar, 1/2t vanilla 1/2 cup cocoa beaten together and piped on the top. Spectacular dessert. Once cut the fudge layer seems to ooze out so I pressed cardboard against the sides of the leftover cake and that did the trick!

Divine Spaghetti Sauce

Something made this taste horrible when I made it, and I can't figure out what it was, as I followed the recipe. Smelt delicious simmering away all day, but when I went to taste it, ugh! Even after trying to doctor it to suit my families tastes, most of it ended up in the rubbish. Will stick with my quick spaghetti sauce recipe.

Cola Pot Roast I

I was craving a roast and since my oven has broken down I decided to search for a pot roast recipe. This was my first attempt at a pot roast, and I was amazed at the results. Delicious. I think I may stick with this recipe even after the oven gets fixed!

Broiled Pork Chops

Nice sauce, I added a little garlic and ginger. The pork also came out very tender. I will definately make this again when I don't have time to leave the meat to marinade for long.

Brussels Sprouts in Mustard Sauce

I agree that the sauce needs to penetrate through the sprouts somehow in order to make them more edible. Maybe cutting the sprouts into smaller pieces so they can be covered in sauce would help? Anyway, I enjoyed the tangy sauce but it didn't really improve the sprouts. UPDATE: I have been eating the leftover sprouts cut up with salt and pepper and they aren't too bad, provided there is lots of seasoning. 3 stars.

Ultimate Twice Baked Potatoes

My family loved these, however they were a bit too greasy for me (I prefer a simple baked potato with salsa and cottage cheese, though). These also take a bit longer to prepare than some other potato recipes. I will definately make them again for my family when I have the time.

Creamy Braised Chicken

While this recipe tasted good, I think the time consuming method of cooking everything seperately is not worth the outcome. If I make it again I will cook the all veges together to save time. To mine I added 1/2 teaspoon of dried tarragon and some cubed, cooked potatoes. I think that there are easier chicken casserole recipes out there which taste just as good, although this one is slightly healthier.

Chocolate Toffee Crunch Bars

These came out slightly crumbly for me (I may have overcooked them), which made cutting them into bars impossible. I had to break them into random sized pieces, which ended up adding to their appeal. I didn't spread the chocolate chips ontop, instead I left them whole (plus I used slightly more than the recipe says) and sprinkled with almonds as another reviewer suggested. These disappeared quickly.

Creamy Homemade Chicken Stew

This recipe is worth making simply for the easy preparation, but it also tastes pretty good too. A great way to use up those limp veges from the refrigerator. (I just threw in whatever veges I could find.) The pearl onions were a bit much in my opinion, next time I willl just add chopped onions.

Cream of Pumpkin Soup

I made a double batch without really measuring any ingredients, just using enough to give me the consistency and taste that I wanted. I ended up with a thick, creamy, flavoursome soup. Unfortunately I forgot to refrigerate the leftovers, and ended up with a potful of stinky soup which went down the sink. I will definately make this again though.

Best Ever Muffins

I am giving these muffins 5 stars for their brilliant texture. They are soft and moist. Obviously the flavour is dependant on the particular cook, and what they decide to add, but these muffins will suit most additions. I added apricots, 1/2 pureed and 1/2 chopped. I would recommend being generous with any additions, as mine didn't have enough apricot flavour. However, they were still very tasty sweet muffins.

Chocolate Filled Muffins

These muffins were pretty good when they were warm, or reheated. They were slightly dry when cold, but then most muffins are best warm. I omitted the almond center and added chocolate chips. I will add that my oven broke down before cooking these so I had to dust off my muffin maker and use it. Maybe this is the reason they didnt come out as good as I hoped, as I have never been happy with how the muffin maker cooks them.

An easy, tasty recipe for a very rich bar. It can easily adapt to any additions. I used toasted walnuts instead of pecans and added one cup of sultanas (golden raisins). I also left out the sugar as they don't need it. The trick with these is not to overbake them as they are supposed to be slightly moist and sticky. I used non stick paper to line the pan and they came out easily. Will make again when I need a quick, easy, and tasty slice.

Chocolate Chocolate Chip Nut Muffins

I did enjoy these but I personally prefer a lighter muffin. These were slightly heavy, but they were moist. I didn't have any chocolate chips so I used chopped chocolate covered raisins and left out the nuts but I will include these next time as I think these muffins need the nuts for a bit of crunchiness. Next time I will also add raspberry jam (jelly?) as I think the two flavours will mix well.

Shepherd's Pie III

A good, simple recipe. I added mushrooms, green and red peppers and extra carrots to make it a bit more substantial. I also used more beef broth and added oregano and parsley for a bit more flavour. Instead of using the mashed potatoes here I used my favourite recipe from deliaonline.com which is healthier and uses quark cheese (my favourite soft cheese). Overall a good comfort food recipe which can adapt to whatever additions you decide to put in.

Jumbo Fluffy Walnut Apple Muffins

We LOVED these muffins. What a delicious treat they are. They're light and fluffy just as described and the taste makes them better. I had to go out and buy a large muffin pan to make these but it was definately worth it! Highly recommended

Cousin Cosmo's Greek Chicken

Boy is this good. I was afraid, despite so many postive reviews, that it would be a bit bland so I added sauted red onion, garlic, extra lemon and oregano to the sauce. I also used alot more spinach and tomato. Im sure it would've been very tasty without these additions, though. I also had to use alot of cornstarch to thicken the sauce.

Chocolate Mousse Cake IV

I made this for mothers day last year and we all loved it. It was easy and looked good when topped with white chocolate shavings. It is mothers day soon here in NZ and this is the cake I will make again to celebrate it.

Championship Chocolate Chip Bars

I have had mixed responses from this recipe. Personally I didnt really like it, but have been told by others that it was delicious. I mucked it up a bit by using baking M&M's instead of the chocolate chips and they turned the topping a strange green colour. If there is a next time I will use chocolate chips or else just sprinkle the M&M's over the top before baking instead of mixing them in.
