Havana Slow Cooker Pork Tenderloin

Found it a bit dry, but then this was the first time we had ever eaten tenderloin. Prepared it as instructed, although I reduced the heavier spices a bit as I do not like things too 'hot.' We had too much leftover due to the large amount--since it was meant for 2, I believe I have several servings left. My daughter says: "The meat makes for an excellent pork sandwich!"

Cuban Black Beans I

I didn't care for it, but my dauhter loved it--so I rated it in-between. Since it was such a large portion, I went with the suggestion of a can of black beans and having the recipe--we added a can of hominy which gave it that extra touch!

Almond Citrus Couscous

We had never had couscous before, but the recipe sounded like a wonderful side for a tilapia dish I was serving; it was top-notch! Couscous was mega-expensive in the store, buying it on its own, so we bought a package of FAR EAST Couscous and threw out the sauce packet . . . there was plenty of leftovers, but what was left barely made it through the next day.

Baked Havarti Chicken

This is the bomb, and should you manage to have any leftovers, extremely double pleasure. We used diced chile peppers (in a can) which gave it a milder flavor. The Havarti with Dill is what pulled an ordinary chicken dinner into a top-notch 'chef-at-home' delight. Will include often at my table.

Cheesy Tuna Noodle Casserole

Very boring affair . . . we did not care for it. Found it to be dry, after baking, and lacking in flavor. The color, also, made the meal look unappealing. Perhaps if some veggies, like peas and mushrooms, had been added? Don't know what to do with this recipe, but we won't be using it again.

Truck-Stop Buttermilk Pancakes

I didn't like these so much . . . they ended up with a slightly rubbery consistency. Also, there was an excessive amount of batter, even when I reduced it to 4 servings. May try this again, but will reduce it to 3-servings, remembering not to overspray the pan with PAM (as it left a funky flavor on some of the later pancakes).

Homestyle Stuffed Peppers

Three of us sat down for the dinner, and all found the stuffed pepper to be somewhat dry and lacking substantially in flavor. Don't know what we can do to fix it . . . perhaps slicing the peppers in half (like my nana used to do) and then stuffing the meat in each side; maybe even blending in a can of that tomato sauce directly into the meat. We will try another stuffed pepper recipe.

Dee's Sexy, Spicy, Shrimp, Sausage, and Peppers

All dinner participants concur -- Excellent! We did use the wine, and it added a bit of flair to the meal. The prep time is the killer--next time, we will prep the night before so we just have to cook it. We served it over noodles, as said. The sauce was ideal, extremely flavorful and lightly coating the noodles.

Sunday Morning Lemon Poppy Seed Pancakes

These are the bomb! Served alongside bananas with softened peanut butter on top, glazed with maple syrup--this was the perfect Shrove Tuesday spoiler event. It was so good we made a second batch for seconds. Some considerations--add about 1/4-1/3 more cup than what is being called for if you do not want so thick of a pancake; make sure to use fresh lemon juice (and not the liquid concentrate!)

Roasted Asparagus and Mushrooms

This was so easy to prepare. I was amazed at the tenderness of the vegetables, and loved the roasted flair -- reminded me of asparagus carefully made over the grill. Used white mushrooms (as they were cheaper), and store-bought fresh asparagus. Looking forward to when the Farmer's Market opens as I will try it with fresh asparagus. Complements well as a side dish to many a main course.

Easy Cornish Hens

So incredibly easy to make! Served it Superbowl night wth a steamed brocolli/carrot mix (as a healthier alternative to chips, pizza, etc.) Made a few alterations--use a low-sodium chix broth and unsalted butter, but only half of what was recommended. Use freshly squeezed lemon juice and some lemon zest in the seasoning (rub). Cooked on high for 4-hours, ever so tender.

Meatball Nirvana

OMG! Turn down the heat . . . please. The meatball was very good in its quality holding well, even when added to a spaghetti sauce. Unfortunately, with the recommendations for its spices, we found it excessively hot. If you just wish a slight kick, I would cut the red pepper down from 1/2-3/4 of what the recipe calls for; also, make sure your onions are finely chpped or it detracts from the perfection of the meatball.

Grilled Pork Steaks with Lemon Butter Sauce

Definitely a keeper, but next time we will let the pork marinate a bit longer in the sauce to soak in more of the lemon flavor. I had never tried my pork steaks in this way, but I was very satisfied with the results. Served it with a heaping pile of steamed broccoli, lightly seasoned and buttered, and rice pilaf.

St. Louis Pork Steaks

Loved it, loved it, loved it. Perfect on a winter night when you don't want something so heavy it will stuff you, and you are watching your calories. Grilled on my daughter's George Foreman grill, served with a side of pan-fried potatoes, and garlic-buttered greenbeans. PS--the apple cider vinegar gives that BBQ-like sensation. Use a good season salt and a quality vinegar to get the perfect blend.

Orange Cilantro Rice

This side dish was made exactly to specification, except we inserted the dash of ginger that so many recommended in their comments. Unfortunately, I still found the dish slightly bland, and the consistency was horribly sticky and the rice clumped together something terrible. I served it with Bev's Orange Chicken (as the Main Course), but even the gravy from the main dish did little to help separate the clinging pieces of rice. *Note: My daughter made this in her rice cooker, which very rarely fails in fully cooking such a rice dish.

Cinnamon-Sugar Popcorn

Very sweet, a great caramel alternative. We did throw in a splash of water because the sugar was having difficulty transforming into syrup, but then things went fine. We shook coating and popcorn together in a paper sack. Perfect for a side dish (appetizer) at a potluck.

Zippy Shepherd's Pie

It wasn't as savory as I wanted it to be . . . the mashed potatoes ended up cold because I let them sit around too long while I was prepping the hamburger mixture. Next time I would suggest whipping the potatoes directly AFTER prepping the meat mixture--and then I would recommend broiling for the browness right away.
