Veggie Potato Salad

I live alone & don't like the taste of Mayo. What I love about this recipe, besides the great taste, is the flexibility in portion. I can easily make a lot for a potluck, or just cook 1 big potato for a single serving just for me. And I like that you can also add other veggies, such as zucchini, shredded carrot, minced olives, and/or tomatos.

Slow Cooker Chicken and Dumplings

This is one of my favorites. I use chicken breasts that I cut into smaller chunks first, and sear in a pan for some color before I put in the crock pot. I use chicken broth instead of water. I sometimes add extra vegetables. Carrots with the onions, and later some sauted mushrooms and / or celery. I season with some garlic powder and a few dashes of hot sauce (I prefer Cholula). Finally, I press out the biscuit dough to thin it out and cut into strips that I place on top for the last hour of cooking. One of the reasons I remake this often is it freezes well. I don't normally like leftovers, but this works.

Slow Cooker Chops

I added 2 cans soup for extra gravy. I also added Mrs Dash for extra seasoning. I have also done it with the water that is listed in recipe and once I substituted 1/2 water & 1/2 milk. However you do it, it is easy, it makes a great meal that fills you up, and it tastes good the next day as leftovers.

Slow Cooker Salisbury Steak

The gravy was very, very salty. My best guess is the Lawry's Au Jus mix I used. I admit, I did not look to see how much was in the packet - just threw the whole thing in. Perhaps next time I will cut this in 1/2, or perhaps skip it and substitute low sodium beef broth for the water & Au Jus packet. I did like the way the beef itself turned out! I served it on a thick slice of toasted French bread. I think next time I will saute some onions & mushrooms to go with it.

Southern Fried Chicken Strips

I loved this receipe, however, I don't think I will make it again. It was simply the mess factor. I've never cooked anything I had to dredge & fry before, and it was messy! 1. I tried the way the recipe said: Flour / egg / crackers and that worked fine. However, I took some review suggestions and dredged twice and went flour / egg / flour / egg / crackers and that was better. 2. I was half way done when I realized I forgot the potato flakes. I don't think I missed them. The end result was still very good. 3. I took some review suggestions & seasoned the cracker mixture a bit. I used fresh ground pepper / celery salt / garlic powder / cayanne. I think the seasoning was a good add. I liked the added spice. Now I need to clean the mess that is my kitchen!
