Squash Casserole II

My husband's new favorite recipe! I tweaked it a little by leaving out the sugar and the bread crumbs. I may have been a bit short on the squash as it looked runny so I added a third egg. I used buttered ritz on top. Lowfat mayo worked fine.

Grape Jelly

Great, easy recipe. I started with fresh grapes with enough water to cover, boiled, pressed, and strained them for the juice. My pectin box (Sure jell) was just 1.75 ounces, but it seemed to have worked just fine.

Slow Cooker Texas Pulled Pork

This recipe gets 3 stars for convenience, but the flavor was unfortunately mediocre. I did leave out the thyme as some suggested, but I don't think it would have made that much difference.

Butternut Squash Casserole

I had to modify this to make it gluten-free by using GF flour and omitting the cookies on top. I used a combo of crushed GF pretzels with a bit of flour mixed in instead of the cookies. I also reduced the sugar by 1/4 cup. Next time I will simply do nut topping like I put on sweet potato casserole.
