American Lasagna

Used 2lbs of beef, but otherwise adhered to the recipe. It's good, but the sauce lacked enough flavor. Future batches will include doubled oregano, minced garlic, possible Italian sausage, red pepper flakes...Sauce needs more zing...

Cheesy Broccoli Quinoa

Doubled recipe and made as described (except I used 4 cups vegetable stock and added 5 serano peppers). This IS easy to make, tastes good. Future batches will include more vegetable stock (maybe 6 cups) and double the cheese.

Mexican Blackened Corn

Followed the instructions, Double batches it. Like previous reviewers, I just couldn't seem to get the corn to blacken until onions started burning & sticking to frying pan (Non-stick coated). I kept sampling corn, but it didn't taste like it had thoroughly cooked until stuff started burning. Maybe a tad bit less cilantro. My wife loved it, I thought it was good. It's labor intensive unless you have serious knife skills. BTW I used a bundt pan to hold corn cob and catch kernels (my wife's idea)

Roasted Asparagus with Parmesan

Doubled the batch(and time to cook). Sea salt REALLY made a difference. Drizzled olive oil before cooking(didn't have spray). Results were fantastic.

Chipotle and Adobo Pickled Eggs

Fantastic Results. 1/2 can(it's a small can to begin with) of Chipotles & adobo sauce. Put eggs in pot, brought water to boil over medium heat,then timed 17-18 mins, eggs into cold water until cool/cold before shelling - worked for me. It's a Keeper!
