LOVE this recipe. It's versatile-- I have added and omitted different veggies, but I also use the squash and onions. You can use dried herbs, but use much less if using dried. I've also tossed in whole garlic cloves and other herbs (basic, oregano).

Curried Quinoa

This is a very interesting quinoa recipe. We added lemon juice and it really made it pop! Next time I will reduce the chile powder because it was just a little bit too strong. All in all very enjoyable.

Fruited Curry Chicken Salad

A delicious twist on a Waldorf salad! The curry really gives it a kick. I used Miracle Whip instead of mayo because it has more zip. I left out the onion, added extra celery, and left out the nuts so that people can add them if they choose (also didn't want the nuts to get soggy overnight). The flavors really mingle overnight and it tastes even better the next day. Thanks for the recipe!

Apricot Chicken III

I made this with chicken breasts rather than thighs. Marinated overnight, so the chicken was VERY tender. I couldn't find any onion soup mix without MSG. I added extra onion soup mix per one reviewer's suggestion... My guy really liked the pairing of onion and apricot, but I would have preferred less onion flavor.

Cajun Barbecued Chicken

Tasty and very simple! I cut the chicken into strips and made kabobs, so that more of the chicken was coated in the marinade. I also added a dash of cayenne pepper for a little spice. Will definitely make again!

Killer Artichokes

The garlic butter dip was a big hit. Since it started to rain, we moved the grilling indoors to the broiler. I just broiled the artichokes for about 5 minutes and they were still great.

Marinated Greek Chicken Kabobs

I did not make kabobs, but instead used the marinade (minus the feta) to coat chicken breats. Then I baked them. The yogurt kept the chicken amazingly moist! The spices and lemon were perfect. I also stuffed the breasts with some feta, and 15 minutes before pulling it from the oven I sprinkled feta on top. Delicious!!!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

These muffins are very moist and tasty. I halved the recipe and it made 7 large muffins. Next time I will try even less oil, since they were so moist. I will definitely keep this as a good muffin base recipe and try it with different fruits.

Annie's Fruit Salsa and Cinnamon Chips

I served this at a gathering and people LOVED it. Raspberries are kind of expensive here, so I used a mango instead and it was fabulous. The chips were easy to make, too (someone said they reminded them of the cinnamon twists you get a Taco Bell). I used a lot less cinnamon sugar than the recipe called for, and it was still great.

Best Brownies

My friends referred to these as "the pixie stick brownies." With the frosting, they turn out super-sweet (which is how I like them!). The frosting was a little hard to spread, but very tasty. Try leaving the frosting in the mixing bowl on top of the oven while the brownies bake-- the heat makes it more spreadable. These turned out pretty gooey in the middle, but still sooo tasty. Not sure how others ended up with "cakey" brownies, as mine were rich and gooey and sugary and HEAVENLY.

Lemon Pasta Sauce

We liked it, but didn't love it. Tasted better when we added a little lemon pepper. As the pasta cooled, the sauce tasted more and more creamy, until it was a little too overwhelming.

Easy Cocoa Ice Cream

I've made this twice now and loved it both times. It's very creamy and veeery chocolately. I used fat free sweetened condensed milk and it still turned out wonderful. The second time I used whole milk instead of light cream. This made it a little less creamy, which I preferred.

Jalapeno Poppers I

Quite tasty, although I will never again make them without gloves! If people do make the same mistake I did, apparently washing hands with lemon juice will break apart the oils much better than soap alone.
